You know I do this with 2 sliced corn tortillas, onions, pepper with 1 lg egg. Hot sauce on the side. Yummy and fast.

My mom used to make something like this. She called it Kitchen Sink Eggs, because she would throw in whatever we had. It usually had potato, chicken, green onion and yellow onion, but could have cabbage, zucchini, broccoli, bok choy, spinach - whatever veggies we had in the house. The potatoes would get cooked in butter for a bit, then all the chopped veggies would get added, the heat would go way up to start caramelizing them, then when the eggs and little milk went in the heat would get turned down and a lid would go on it. When the bottom got browned she's flip it, add cheese to the top, cover it and wait for the bottom to brown. Oh man, it was one of my childhood favorites.

I just made this for breakfast and it was absolutely delicious. I didn't have any green onions (scallions) so I used white onion. Then, to dress it up for added flavor and visual appeal, added a couple of slices of tomato. Again yummy, thanks!

SISTER YUMMMM ! You know one of my favorite comfort food combos in a pretty way! I never shredded mine in this dish, just potato, onion and egg at the end , but this is excellent. Plus I love green onion even more than sweet. This could possibly be made with cabbage and cheese maybe?? Think? That’s an Irish thing… like Irish colcannon?😀

I would use sirachi instead of ketchup. I’d add carrot and zucchini as suggested. I would also add cheese before rolling it up.

I made this for dinner last night , for my husband and myself. I used three eggs and a small zucchini and a little of my thumb went in there when I was using the shredder. it was real tasty and even Mr picky eater enjoyed it. however mine looked more like a scramble then an omelette. nonetheless I'll make it again thank you for the recipe .

This looks great. I'm trying to eat 25 grams of protein per meal (recommended). Russett potatoes have 7 grams......add the 2 eggs at 6 grams each.....you're at 19 grams. Add some yogurt or milk and you're there ! Plus potatoes have fiber, vit C, potasium and Vit B6.......fry in Olive Oil.......This is a healthy meal ! Plus fiber and protein help fill you up so you eat less.....this actually helps with weight loss....

Thanks for the inspiration. I was lounging on the couch wondering what to eat for supper. Your video popped up out of nowhere. Coincidentally, I just harvested potatoes last week. I have young onions and kale growing in my garden. I have chickens in my yard pumping out eggs. It's as if God said, "My silly daughter, here is how you put it all together."😂

I make this for my kids' breakfast on a fairly regular basis. The only change is some shredded cheddar cheese sprinkled over everything with about a minute to go cooking.

I have been adding two egg yolks to refrigerated "Simply Potatoes" (I think that is the brand), along with salt, pepper, garlic and onion powder, and a few tbs of olive oil. Mix it thoroughly and fry it (I use med-low heat for 6 min on the first side and 5 on the other). It is also great to melt some shredded cheese over it too. It comes out like nicely crisp outside and soft inside hash browns. I squeeze the potatoes in a tea towel but I'd like to try washing to remove the starch as you suggest.
