Ingredients
Sponge : 600g Fresh Strawberries
150ml Milk
100ml Cooking Oil
300g White Flour
6 Egg Yolks
150g Sugar
1tsp Baking Powder
Lemon Zest from 1 Lemon
A pinch of Salt
2tsp Vanilla Extract

Meringue :
6 Egg Whites
150g Sugar
A pinch of Salt
1-2tsp Vanilla Extract

Start by slicing the strawberries . Add the egg yolks in a bowl , a pinch of salt , and mix for a minute then gradually add in the sugar and continue mixing until the mixture doubles in size .
Gradually pour in the oil, milk ,lemon zest and 2 teaspoon of vanilla extract. Mix the baking powder with the flour and add them to the mix . Then ,pour the mixture in a rectangular tray ( 35/25cm ), add the strawberries on top and bake for 30-35minutes on 180degreesC. In the meantime , make the meringue .
In a bowl , add the egg whites , a pinch of salt and mix really well for 1-2 minutes, then gradually add in 1-2 teaspoons of vanilla extract and keep mixing until you obtain a dense and glossy meringue.
Once the cake is baked , take it out of the oven and add the meringue on top , then bake again for another 10-15 minutes so the meringue becomes golden on top.
Let the cake cool down completely, then portion and serve .
