Welcome to the world of pressure canning. Nothing to be scared of, and the benefits of canning your own home grown produce and meats is tremendous. I've been pressure canning as well as water bath canning for many a year now and have never had any problems. My mom taught me, and her mom taught her. I'm going to be 70 in a short while so you can tell how long this has been passed down. Just follow the safety precautions and you are good to go. I just ordered my 921 canner and can’t wait! I’m glad to see this because I wondered how many wide mouth pints I could put in to fill it up. Love the peas, they look delicious already. You said east central Ms. What area? I'm from Jasper County and canning purple hulls today. I was looking around on here for some different flavoring ideas and stumbled upon you. I'm headed out now to find some ham bullion.

How did the peas taste with the ham bouillon? Roll with the bullion or stick with 1/2 teaspoon of salt?

Every time I can our home grown purple hull peas, they turn out mushy...is there a trick to get them not to fall apart?

I can see a fear of pressure canning. I mean, you are taking a pressure vessel and making it do the very thing that makes it come awful close to being a pipe bomb. Not usual for the average kitchen.
