Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.
I have had my electric digital Presto Precise Pressure canners…yes, two of the so I can do double batches….for almost a year now and just love them. I have a vintage stove…a 1950 lemon yellow Chambers gas range and although I have canned in regular stove top canners since 1972, I did not like canning on my beautiful vintage stove…SO…having these electric digital canners is a WONDERFUL joy for me. Today, September 22, 2023, I have canned fresh mushrooms and have five quarts of beans in the other canner…2 wide mouth quarts of pinto beans, and 2 regular mouth quarts of Anasazi beans. Surely you have access to Anasazi beans where you live, right? We love our pinto beans in Texas but ever since I discovered dried Anasazi beans in Cortez, Colorado when we were on vacation in 1995, I have really preferred Anasazi over pinto beans. We bought a 25# bag of Anasazi beans in ‘95. After they were gone, we did without for a number of years until we finally found a “fruit stand” that actually carries Adobe Milling Anasazi Beans close to us here in east Texas and even though they are pretty darn expensive, we buy more every time my gallon jar gets close to the bottom. But, again I love my Presto Precise Digital Electric Canners because they are so easy to use. Love your videos.
I think it’s important to point out that the soakingnit overnight helps to break down the phytic acid that makes beans harder to digest for a great number of people.
Thank you for taking a scientific approach to testing this canner. I keep hearing folks say "I did my research" and it makes me cringe, because research means exactly what you have done--you roll up your sleeves and test it out. Being a learner or scholar and being a researcher are two totally different things. Thank you for being a researcher so that I can become a learner!! I got a second one too! I love my Presto Canners. IMHO, I think everyone who wants a Presto Electric Canner should get two of them, because who wants to get everything out and get all the beans cooked, water ready (I use hot purified water to fill my jars) and tie up the kitchen and only do 5 jars??? I feel better when I have 10 done for the same amount of work, almost. Plus, you are filling up your pantry faster doing double duty. It may be a bit of up front expense, but it is an easier way to can, or at least I think so. Thank you Rose. Wouldn’t have been as confident without you and your tests either.

I love these videos you do showing the temperatures during canning. I see so many RU-vidrs recording videos of canning dry beans without soaking or heating. I’d be really interested I what the results are when canning beans from the dry state. I just don’t see how that can be safe and your awesome gadget would show that in real numbers. Thank you for these informative videos.
Soaking beans helps with digestion and you get less gas. Seriously. There is a scientific reason for this and easily found online. I also soak raw nuts for the same reason... easier digestion.
When you can beans from the dry state there is the possibility that they will swell beyond the capacity of the jar and be so crammed together that the heat cannot properly penetrate to the center. The digestion issue is a secondary benefit. The most important reason is food safety.
It makes me feel very uneasy that there are so many people using unsafe canning practices out there. Canning beans from the dry state, dry canning potatoes, boiling water bath for green beans, and so on.
@@HKhan-wu4hs That's why I follow a scientist who does her own testing and explains the "why" and "how". 😄 The old add age that people have done it a certain way for years is so misleading... they don't research and disclose how many people actually died from doing it that way over the years.

I used my Presto electric canner for the first time today. I processed beef bone stock..all pints. My first low acid food and haven't even water bathed for several years. I remember I did a ton of bing cherries and made cherry jelly when my girl was 2 and I was 44. I had my toddler corralled-in the living room with the wizard of oz. I was always afraid to can low acid and always wanted to then I bought this electric canner on impulse. I studied for the next 7 days and watched you on your channel with this machine. I watched other canning ladies do raw pack chicken because that is next then I will raw pack pork butt maybe shoulder in pints because it is only my husband and me. Thank you for being a professor. I checked out your little computer data logger you drown in a jar. It's pricey but I may buy one later mostly to leave to my daughter when I get my wings. She's working on being a medical doctor and has a baby but I want her set up lol. How do you use your pinto beans? Thanks for all your hard work and tell your husband he does a good job videoing.

Thanks to your comparison and the other videos, I ordered the IP Max yesterday. It is the best size for me to handle and for the two of us to put food by. I have canned before, so I have everything else I need until I run out of jars. My old pressure canner was impossible to control on a glass top stove, too big and heavy, and I no longer trust it. Having done a tremendous amount of hospital time in the last five years, feeding us while recovering at home or rehab will no longer be a difficult problem. My only dilemma is deciding what to can first! I love all your videos, considering them as the best in any cooking category on the web. I intend to order a few freeze dried foods like cheese and sour cream, and I use my Breville countertop smart air oven for dehydrating other items. I’d love to know if I should consider more than those two items that would be impossible for me to dehydrate. Maybe heavy cream? I do have dry whole milk and will try ghee. I have that same canner. I have canned pints of pinto beans in it last fall, and wow, the beans are wonderful and so creamy in comparison to store-bought canned beans.
As an avid lover of science (predominantly biology of all areas), I absolutely appreciate your approach to canning! Most people never realize the sustainable amount of science that is involved with such a pedestrian activity. The process reflects biology, chemistry, botany, physics, mathematics and, one could effectively argue animal husbandry and geology! Even as a young girl I was never appeased with a because-it-is type of answer. My curiosity waa never satiated until I was presented with reasons of substance for why certain things happen. From my very first experiment of mentos and a bottle to soda to demonstrate surface tension, to being mesmerized by the "magical" abilities of starch, salt and water in my potato to produce energy, I always needed to know exactly why! Your videos do an absolutely amazing job at getting to the "why" of the matter. Blessings!🥰

Pam, I just went to my extension center and this is what I got on this canner from them I can't add screen shot so I'll try to add my question and reply. I contacted the Arkansas cooperative extension service (UAEX), and this was our exchange... My original question... "Hi, I recently purchased a Presto Digital Pressure Canner (not pressure cooker) after reading good reviews and seeing that it followed USDA safe pressure canning guidelines. After many years using a traditional Presto Pressure Canner, I was excited to try this out. However, upon receiving it I realized that it was not USDA certified, but rather that it follows safe canning guidelines per USDA, which led me to have a few concerns, namely that it was not USDA approved. However, upon further research, I realized that USDA does not certify/approve specific canners, but rather guidelines for pressure cooking. I am just curious to see if you guys have any thoughts or inputs on using this Pressure Canner. I know there is some hesitation in the industry due to it being non-traditional, but I am also skeptical that Presto would risk their name on something that is unsafe. Does UAEX) have any plans to test this product? Any help is appreciated. thanks!" Their reply "Hi there! Our Food Preservation team says they like that canner, and would recommend that you use it!"
I just received my Presto Electric Canner and I’m watching your video on canning beans. My question is when you soaked the beans overnight did you leave them on your countertop or in the refrigerator? I can remember my mother always soaked hers overnight in the refrigerator and then cooking them the next day for dinner. I just love your videos, I’ve learned so much from you!!

@Rosalinda Perez, per The National Center for Home Food Preservation website: An average of 5 pounds is needed per canner load of 7 quarts; an average of 3¼ pounds is needed per canner load of 9 pints--an average of ¾ pounds per quart.

We met at the University of Wyoming when we were both Ph.D. students and fell in love. We were secretly married for two months before we had our family wedding--imagine that--we were both in our 50s and we felt like a couple of kids! I think your teaching style is just peachy. I cannedpeaches and perhaps jam yesterday . We are forming a teaching group at church to help young ones can, dehydration and put foods by. Winter is always coming
What size is your canner? This canner is the answer for me. I have a glass top stove and the first time I pressure canned, it got scratched when I moved the pot. I can use smaller pots for water bath canning. I have looked for an affordable hot plate with enough power and a wide enough coil, to no avail. I considered an outside gas stove like yours, but hesitated because of the trip from the kitchen. An electric pressure canner is the solution. Since you personally tested it and showed us the results, I trust that. As soon as I can afford one, I am going to buy it!
My regular pressure canner is the Presto 23 quart aluminum pot, which I would never use on my glass top stove. I couldn't anyway given my stove top is induction and aluminum won't work on it. That is why I have an outdoor canning station.
One of the best purchases I have ever made! Plus, it doesn't heat up the whole kitchen (which is nice in all this warm weather). So far I made RoseRed's recipe for Green Chili Chicken, plain beef chunks, and I water bathed canned some cherries in it.
Another score! I just love your test runs & what you find out for us. What’s your take on steam canners? I’m looking into buying 1. I have a bad back plus I’ve had open heart surgery & it’s so hard for me at times to handle a stove top water bath canner. I’ll aim for a digital next year! 😜😉😉 good thing hubs is all about some canning too! Have also been looking at beer brew stations for canning. An Amazon search took me to them. Thank you so much for your comments. The USDA now recommends steam canners, so you are good to go. I used one years ago before they were recommended, but I quit using it. For me, it was easier to use regular water bath processing.
The ONLY thing is the amount & the capacity to can in it. But I’m thinking for me… the good outweighs the bad here. Thanks so much for your input. I value your opinion highly! ❤️🌹
I. enthusiastically bought a steam canner…. But didn’t factor and that I have to add to 10 extra minutes to everything because I live at over 4000 feet altitude . That really limits what I can do because I can’t exceed 45 minutes.
I do appreciate all that you teach. I have a question. I was taught that with low acid canned foods, such as green beans, corn, etc. you should boil the food ten minutes in an open vessel before consuming it to make sure there is no botulism. Is that also necessary with pinto beans, canned chicken, etc?
I love canning dry beans. I think they taste so much better than commercially canned beans in a metal can. I’ve been experimenting with calcium chloride which is supposed to reduce bean splitting.

I appreciate the information and applaud your use of a datalogger. I am an engineer and have had a career of data collection also. My question is: Why can beans when they can be stored dry and cooked at need?
Purely convenience. I thought the same thing before I started canning beans. It is so wonderful to make a meal decision at the last minute that calls for cooked beans and know you can do it because you have some in your pantry! Thanks for your comment.

Hi Pam, I wanted to get your opinion on something. After watching you use the data logger, it occurred to me that it could be something to use each time canning. Each canning batch could get a batch number and if you always opened the jar marked as having the data logger first, you would have confirmation that your batch is safe and nothing unknowingly went wrong during processing. I know it seems like overkill, but that’s how my brain works. 😂 I was just curious about your thoughts.
Thus is an awesome video, and I'm glad you informed us on the data logger as well. Do you have a lot of those data loggers for each canning? If you canned one in each batch that seems pretty expensive.
I have been looking into the Preston electric canner. Your videos have been very enlighting. Have you ever tested or done raw chicken legs on the bone. Keep up the great information
