Pressure Canning Green Beans in the Presto Digital Canner

We tested the Presto Digital Canner using a scientific data logger to record the temperature of the green beans in the jars during processing. The goal was to see if this canner kept the food in the "kill zone" long enough to kill any botulism spores that might be present. The green beans were canned using the USDA pressure canning guidelines and we share the results of the test.

Exactly. They should be sponsoring her. Perhaps they don’t know Pam makes these videos. This particular data logger company should be too. ( I’ve been searching for one-and can’t find in Canada) They’d both make a few more bucks if there was a link to their products in the description of Pam’s videos. Affiliate links. It’s hard work making videos and there is some expense at times I’m sure; and this would help her out a bit expense wise/ to make more videos, as well. ‘Time is money’

Unlike many producers, she does not put adds or takes kickbacks for products so she can be neutral in her presentations. That device she uses to measure control is pricy! It’s time intensive and you can help here by Liking and Subcribing the videos !

I got this canner and I absolutely LOVE IT!!! I tried the regular one on the stove and I couldn’t get the hang of it at all. I seen this one and the instructions were sooooo easy! My 1st project was canning hamburger meat and all of the jars sealed!😊 I can’t wait to try this too! Please keep doing these videos!💕💕💕💕

Many thanks to you for showing this testing process. I trusted Presto to have done the proper testing and have LOVED my digital canner, but it's reassuring to actually see the proof. Presto would sell many more digital canners if they would just publish their numbers as you have done. Thanks again.

Your video was so helpful. I had purchased the Presto canner and was not confident enough to use it for 2 years. I got it out and watched your video multiple times and went for it. And happy to say thats it wasn't t as difficult as I had imagined. And now I'm pressure canning my green beans. Thanks again for such a great video , was so helpful!!!

An awesome presentation! You've sold me on this technology. I struggled as a teenager and young adult with pressure cookers (back in the 60s/70s), so I haven't been motivated to repeat the experience with canners. But this device takes most of the work out of your hands. There's no whispered prayers that the thing won't blow up. Thank you.

I really wasn't intending to sell you on anything--just reporting my data. This canner failed to get meat sauce up into the safety zone so if you do purchase it, be aware of pressure canning thicker foods.Thanks for sharing your comments.

Thank you for all of this wonderful research. I bought the Presto Digital canner because I am not physically able to handle a large canner. After I bought it, I started hearing it was not safe and I became afraid to use it. Thank you so much for providing scientific testing to the Presto.

First, you are amazing! Second, thank you for all this information. I just got my Presto and did raspberry jam today and did the water bath method in it. Worked wonderfully. This was a gift from my husband because I am really getting into this way of food preservation and wanted a pressure canner that was easy for me to work with. I love making my own vegetable broth and needed a way to can it effectively. I have been freezing it and I am running out of space in my freezer. Henceforth, I am going to pressure can it. Green beans are on my radar for sure! Again, thank you for doing this review. I love the science behind how things work.

I've not been canning long and was afraid to do anything but water bath. I didn't know there was such a thing as an electric canner! Thank you for this video, I will be saving up to buy one now. I feel more confident about trying it now.

I enjoy watching all the Presto Digital research you are doing. I presently don't have a pressure canner because I have a glass top stove, and am afraid of breaking it. I've broken one already. I just found your channel and have been watching all previous videos. I love the no-nonsense information you have. When I got to the apple peel jelly video, it took me back in time to when my mom and grandmom would make jelly the same way. To this day, the only way I make apple jelly is this way. One time Grandma put in a stick of cinnamon. We called it apple pie jelly.

I think this machine is convenient for small batches, but if you have a lot to can, I still like the larger traditional pressure canners because you can double stack pint jars. I use my presto electric canner primarily for chicken and dried beans all year long.

I bought an electric water bath canner this year and love using it, so much easier than how I used to water bath--outside in a giant water bath kettle with boiling water splashing all over. I am excited that they now have a safe pressure canner available, thanks for doing this research.

Ann--I am going to do a video in just a few days on how the world of pressure canning has changed with the advent of these new electric canners. You may want to wait until you view that one and then decide. I think the Presto is a good canner, but it has limitations.

Love your videos with the USDA saftey standards and the sciene behind it. You've increased my confidence in canning greatly. A couple of questions if you don't mind. 1) Have you ever tested or tried the reusable canning lids (tattler)? 2) Have you ever done a video on the shelf life of home canned goods? We just finished off the remainder of raw pack chicken we canned in Dec 2017, no appreciable loss of taste or texture 40 months after being canned. Proper storage in cool dark basement helped I'm sure.

Thanks for your comments. I did try tatler lids and they seem to work fine. I still prefer Ball or Kerr. I have not formally tested shelf life of canned goods, but I have been eating them for over 70 years so I know from experience that most are really good for a couple of years, some are still good after 5 years, and we recently found a pint of chicken I canned in 2011 and it tasted great and we are still alive and well!

I got my Nesco last week. So far I've water bathed dill pickles in it, pressure canned 13 pints of mixed string beans and 11 pints summer sweet peas in it as well. Everything sealed, seems to be good. I'm loving it so far. Stocking My Pantry has a really good video on the Nesco/Carey canner, it also comes with different "valves/weight" to use depending on your altitude

Most Important steps: 1 - make sure you imput correct canning time!! There's no going back. Its a start over. 2. - Check power cord every time for good tight fit! I bought this Canner a couple months ago and just loved it aside from the operator error I did such as not putting in the correct processing time and having to start completely over. Then when I thought I was past the newbie stage I was set up for pressure canning bone broth. Into my second day I think, the cord was loose where it connects to the canner. I touched it slightly and the Canner shut down, I had essentially unplugged it. Well I started over again but it hasn't worked right since. The beep it makes at every process became inaudible and it didn't seem like the jar warming process was as hot. It also got stuck on the 10 min venting and would not move on. I restarted several times and it would work every other time or so. I contacted Presto and they were very helpful in that they are going to replace it. I am not sure my broth got up to temperature or not now. It went thru the process but was the temperature hot enough...I don't know.

If I sent you a brand new Nesco/Carey electric canner, would you be willing to do your science on it? I think there will be a lot of interest in that video along with one on an instant pot duo. I know there are many people canning in those and we need to see the science for them.

Instant Pot Duo is not a pressure canner. The IP Max is. If you watched one of Pam's recent videos using the Max, she pushed pressure cook by mistake and none of the jars came to correct temperature.

Don't tell Jim, but I am slowly thinking about doing some testing in the Carey. LOL! I have had so many requests for it. You don't need to send me one, but thank you so much for the offer. My hesitancy is that people think that my results "prove" something, and they don't! My results are just one indicator.

Sue--That is absolutely correct. And for that reason, I will not test the Duo. I am only interested in pots that claim they can safely pressure can.

I bought the Nesco digital canner and did my first jars of tomatoes today! They didn’t end up being all the way full but that’s ok. They are sealed and look good. Can’t wait to try green beans now! Also, I watched another video on canning green beans and she said that if your jars are cool, the beans should be cool. If your jars are hot, the beans should be hot. Is this right? I’m unsure of how to keep my jars warm and have the beans warm too. Seems like an unnecessary step. The tomatoes I cannned yesterday I did without hot jars and they turned out fine.

First of all, great video. I followed the instructions and thought I had the correct results. Everything sealed, there was no siphoning. However, a friend told me that I should have used the green valve (for high elevation) but I'm in Pennsylvania (not high elevation). Now, I'm wondering if my jars are safe.

Hello Rose... I'm not sure where to post this. But I have noticed a lot of canners and you saying they wish they could Bypass the jar warming phase on the PDC. Yes you can. ON PAGE 49 of your Manuel it says. PRESS and hold the > for 5 seconds until it shows HEAT Icon. I have done this successfully a few times because sometime my plug connection to wall doesn't connect properly and I loose my setting after I've warmed my jars and filled them and ready to can. My very first time canning, so I got this machine. I made 4 quart jars but read it as beans instead of green beans, so did 90 mins. I messed up. Should I throw them away as burnt or will they be ok? They look ok. PS Thank you for all you do!

Pam I was wondering if I could ask a big favor. With the way you research and your scientific background. I feel like I can take your word about how this could be done safely. Is there anyway that you can show us how to do garlic infused cooking oil? I understand that it’s a little tricky that it can cause big problems like botulism and stuff like that if it’s not done properly it’s more than just dropping the garlic into the bottle of oil. Thank you, but why do you seem to be concentrating on the presto canner? I know you did one on the instant pot canner, which I love to use for pints. Are you preferring one over the other?

I had many requests for the Presto since it was exclusively for canning rather than a multi-purpose pot like the Instant Pots.

I would feel safe with tested recipes except for anything that is thick like meat sauce, which failed its test when I did it, and any other thick food.

Miss Pam I have a question for you . Not related to canning exactly but if anyone can answer it you can . Here goes….. I grew up drinking Sassafras tea ( I’m 64 for reference) as a child as did my entire family and loved it. Now it seems the FDA states Safrole oil is carcinogenic. My question is are sassafras leaves safe to dehydrate and grind into file’ powder or not ?? We have beautiful sassafras trees here in SC . Thanks for your help …Linda E.

Thanks for the question. I did a little research and don't think I would risk it. I also learned why root been extract no longer tastes like it did when I was a child and my dad made homemade root beer with dry ice (we have a video on that). This is such a fascinating video. I am blown away by your process of testing. How did you learn? Are you a master canner, scientist, etc? No - not being snarky, but very curious how you got to know how to do this method.

I really appreciate your video's. I've never canned before but I am now. I've already water bathed 16 quarts of tomatoes. I need to do my green beans, but I don't have an electric canner. What I need to know is how much water do you put in a canner? How far up the jars should the level be?

The amount of water depends on the canner. For my standard 23 quart stove top pressure canner I put 3 inches in the bottom. The instructions that came with your canner should give you that guidance.

@@RoseRedHomestead I wish it did have a booklet or something. I only have care manual. I was sure it would come with a book, but no. lol It's a 32 q stove top with gauge and weights. I just couldn't find anything to tell me whether the water just comes to the support or up on the jars. 3 inches in mine would be slightly up on the jars. Base rack is about 2 inches above bottom. Thank you.

Can you make a list of anything you found not safe in the presto electric? I think I seen one you found not safe but redid and then it was safe. I'm trying to decide what to buy for a canner. I have a glass cooktop and found one canner that should work but trying to decide if I should get an electric one. I don't want to be limited on what I could can. Thank you so much for doing these videos!

The batch of meat sauce a re-did still did not meet the safety standards. So I would not use this canner for thick foods like meat sauce, etc.

The instructions call for 3 quarts of water, so that is what I put in.

Presto only recommends that you only use 4 wide mouth quart jars, and I know if you put them on the edge 5 will fit. If you added more time, could you do 5 quarts? Would the data logger say that would be ok? This would be nice to know because every time you can, you could do an extra quart.

Do you have any experience with a steam canner? I have the usual water bath canner and a stovetop Presto Pressure canner but my steam canner is new…so I’m researching usage. Great demo on the digital canner.

I used one years ago and then the USDA recommended against them. However, they have now changed their recommendation to say that they are safe. Here is what they say: nchfp.uga.edu/publications/nchfp/factsheets/steam_canners.html

Are the industry standards what commercially canned foods go by, or are they what home canned foods go by (USDA guide)? Just curious 💞

Both, actually. However, commercial canners can reach those standards with their professional equipment in ways that are not available to home canners. Regardless, home canners and commercial canners must do what it takes to bring the food up to proper temperatures to kill botulism spores.

When you use your presto canner out on the outdoor stove, what stove are you using? I am having trouble getting one that is 12000 btu. That is what I am told you need for that canner. I have a Presto Electronic canner and I have seen other u -tubers process 4 or less quarts in this canner. My instructions say pints. Can you possibly do a video on the safety of this with your little tester thing a- ma- jig. I asked the U-tuber if she has a larger canner so we can also buy one and I have not received any response. Maybe a test run with water or something as to not waste any product incase of failure. I trust you will find the answer for us. Thank you so much.

I would follow the instruction book that came with the pot. I have processed and tested both pints and quarts, but used 5 quarts and 8 pints each time.

When you talk about the industry standard of time in the kill zone, does that refer to the processing time in the recipe? Or where can we find that?

I think it refers to the total amount of time it’s been proven to take to kill the botulism spores. That’s the kill zone if I’m understanding it correctly. That’s longer than the processing time which is why she stressed to never do anything to sped up the cool down in a canner after processing.

Janice this is a really good question without a solid answer. The processing time is separate from the kill zone time. It takes part of the processing time to get the temperature up into the kill zone and then it stays there after the processing time has ended usually for several minutes. The kill zone time is calculated by collecting data on the amount of time the food remained at each individual temperature between 240-250F. Therefore, there is no set amount of time you can plan on in advance. That is what makes these canners so difficult to test.

So what is the final answer? Presto or Instapot. I am single and will use if for mostly canning soups, meals like Swedish Meatballs, Stews, stroganoff, and the like. Can't imagine wanting a quart of anything. I enjoy cooking but I do have an induction range so aluminum canners are out. I am leaning towards the Instapot but the reviews say there is an error code issue. Have you had an error code yet.

I have not had the error code appear on my Max and I was not aware it was an issue. My preference is definitely the Max. I feel it is safer.
