Rabbit meat is high in protein, low in fat, and big in flavor. It is one of our favorite meat sources that we produce on our homestead. Today, I am taking you along as I pressure can some rabbit meat to use in future dishes. Knowing how to pressure can meat is a big step in preparing for the future. If power goes out, your meat doesn't spoil. If you need to conserve resources, the meat is already cooked through. If you need a quick dinner, all you do is heat and go.

40 years ago we raised rabbits. Although I cooked and canned back then I did not have real access to rabbit recipes. No internet then. I found one that I used over and over. Luckily the kids and husband all loved it. Today I am starting over with a new homestead, kids grown. I follow you on RU-vid. You remind me of me. I ordered your book today. Thanks

@@LivingtheHightLife After skinning, lightly brown in cast iron pan w/butter. Pile as much rabbit, piled on as I could fit. Cover with a mountain of sliced onions and then sour cream. No real recipe amounts. Still, the pile was high and I covered it loosely with aluminum foil to keep in moisture while it cooked. Cook on medium. As it cooks the sour cream melts, gives it moisture to cook in. The onions sink down completely. Not sure how long it has been a long time. Salt and serve.

@@LivingtheHightLife I'm too new to it. I saw the New Zealands and Californias but craigslist Boise either didn't have any of those breeds or maybe they were too expensive. I thought when I get the money (AFTER the money to build a pen) that I'd look for companies online.... unless you recommend not to.

@@lesliekendall5668 new Zealands are my favorite meat rabbits. They do really well. Californians are also really great. Wow you feed the Rabbit Bacon to your Chickens I love it the belly meat is Bacon like a Pig

Sometimes I will keep it to make jerky out of it, but otherwise it goes to the chickens. I find it to be a weird texture when cooked. I'm not a fan.
