Prime Cut Tomahawk Rib Eyes to break in the new Weber Kettle

First cook on the new Weber Kettle using the Slow ’N Sear and seared with the cold grate technique using the easy spin grate.
• Started with two 32 oz tomahawk rib eyes, Prime Cut.
• Used kosher salt on all sides of the tomahawks and put in refrigerator for 1 ½ days to dry brine them. One done, I put on pepper and granulated garlic and let them come up to room temperature.
• Set up the new Weber Performer with the Adrenaline Barbeque Trifecta 2.0. Slow ‘N Sear, drip pan and easy spin grate. I did remove the water pan.
• Had about 20 pieces of charcoal in the SNS, also had about 20 pieces in the chimney to start the coals and added to the un-light charcoals. Kept the temperature to around 350 degrees.
• Placed the two tomahawks on the indirect side and probed them for temperature. When they reached 80 degrees I flipped them.
• When they reached 110 degrees, I removed them and added another ½ chimney to the SNS to prepare the sear.
• Used the cold grate technique and placed the tomahawks on the cold side and spun over the screaming hot coals. Did 1 minute per side 2 times, so basically 4 minutes total. Once they were done, we let them rest for 10 minutes before cutting.
Summary: For the first cook on the new Weber Performer, this went great. We did start with the Prime Cut Tomahawk Rib Eyes, so that helped. These were perfect with a great sear. The Slow ‘N Sear products worked perfectly and would do these exactly the same next time.

Mike Wade I didn’t notice the temp rising on camera, but pretty cool that you saw that. I have seen the temp rise 5 to 10 degrees while they rested in other cooks I have done. Yes, we love the low end of medium rare and these turned out great! Thanks for watching!

Great cook! You're giving me ideas. A tip to try for next time, let it rest in between cook and sear. 15-20 mins, then eat it hot from the sear. You'll never regret it

Hey great video just wondering about the equipment you have what are you using for a charcoal tray and drip pan in your Weber I have been looking for similar items and can't seem to find anything like that

NKnors, thanks for watching. The charcoal tray is the Slow n Sear and the drip pan are both from Adrenaline Barbecue Company. I also have the easy spin grate. I bought the Trifecta, which is the combo pack of all 3 items. If you watch our Sausage, Peppers and Onions video, I use the drip pan like a griddle, which is what it is made for. Let me know how you make out!

hyperspaced77 Thanks! Yes, they can be with the wires. I have a few of the Meater+ that I usually use in thick steaks now. I still use the wired probes when I have multiple pieces of meat for a long cook.

Christopher Van Brackle I saw in your other comment you saw I got these at Costco. These were prime and I dry brine my steaks with kosher salt, usually for 24 hours. It really brings out the great color in the steaks, plus it does great for the flavor.

Does the lid close okay over the wires? Maybe you should put them through the vent holes on the top of the lid.

The lid was fine with the wires for doing these steaks. For me, putting the wires through the vent is a huge pain because anytime you move the lid it is a hassle. I actually gave this grill to my son in law and got the SNS Kettle, they already have a probe hole built in and no longer have the wire issue. Thanks for watching! Cheers!

Yes, I have learned that these will rise at least 10 degrees while sitting before the sear and we like the low end of medium rare. This was an older video, so it made me laugh, our videos are better now! Cheers!

Is reverse searing really better?? Squirt Bottle helps on those flare ups if you want to try that method. Those steaks came out perfect though so what the F do I know :)

Fluphen Azine I have done them both ways and it is hard to say one is better than the other. I do like to reverse sear on a nice thick steak and get a great sear. My opinion is you can’t do the reverse on a thinner steak, it will get over done. We have videos searing first. It really comes down to what method makes the perfect steak for you! Do you feel that the side table is adequate, or would u consider the Performer 22 Premium?

m Darks For me this side table works! I have multiple grills on my patio, so I have plenty of space to set things and didn’t need the extra space. The premium looks to have a very nice working space, plus more storage underneath. It will come down to what you need? I struggled on which one to get when I got mine for the same reasons. Hope that helps some?

Thanks for watching! We do not have one specifically showing how to clean the grate. What I do is get my fire going and once the grate is hot enough, I clean with my grill brush. If I am doing a lower temp cook, I will rotate the grate over the fire to cook off any leftover from the previous cook and clean with my brush. Hope that helps! Cheers!

Are you sure it's not an ad for ABC? Drip n Griddle, Slow N Sear, spin grate, Maverick thermometer that they sell! Just picking at you, I have the SNS and I had the drip tray, but I lost it. I think it was in an old propane grill that I used for storage and finally threw out. :(

Shawn Kinman LOL! It did sound a little like an advertisement! Only issue, it was free! It was impressive customer service for the thermometer, I thought mine made some noice, but didn’t know I had an issue and they told me about it and replaced it and told me to keep the old one, so I got extra probes. I do like the SNS and use it all of the time. It is a shame if you through it out! Thanks for commenting!

Yuri Suarez Tough question! I had my Kamado Joe first and got the Weber charcoal so I could so some quicker cooks. Since you have the pellet for smoking, the Weber might be the better choice for all around cooking. Have you looked into the SNS Grills Kamado? Kind of the best of both worlds because it can be a full kamado or can run regular charcoal and comes with all of the Slow N Sear capabilities. Good luck and let me know what you decide.

@@Abdulla_alsafar Yes, the Slow ‘N Sear company actually started with only this product for the Weber Kettle. They have multiple versions. The regular Slow ‘N Sear and Slow ‘N Sear Deluxe are for the 22” Weber. The Deluxe has the removable water pan. That is what I have and is nice that it is removable. Please let me know if you have any other questions. We do have other videos using a Weber Performer and the Slow ‘N Sear.

@@Abdulla_alsafar Yes, the Slow “N Sear deluxe was made for any 22” kettle. If you see on their site, they also have Slow ‘N Sear or charcoal baskets for an 18” and 26” kettles. Mine rarely comes out of my grill, use it all of the time!

Anton English My guess for the indirect side is about 45 minutes, give or take? I honestly did not pay attention to time because I was only concerned about the internal temp with the probes! We did have a beverage or 2 as well. LOL I will have to keep an eye on time next time I do these. Thanks for watching!

@@beers-jackofbbq over 30 years of cooking my weber platinum finally burned a hole in the bottom i love the plastic serving shelf I'm going to buy a weber performer and put the kettle in the old one since it's not metal it won't rust I wish weber never started making their shelves out of metal they were way better with the plastic.my other weber also got a hole burned through it but it was my spare grill that got a lot of use and abuse over the years .weber grills rule .

H Thanks for asking about the Weber. It has done very well, I am in Eastern PA and we had a cold winter and I continued to cook all winter. I will gladly do a burger cook on it, but I would do indirect until it gets close to temp and then direct to sear. We also have a smashburger shoot we did on this that you can check out. Just an FYI, we are a 2 man team and we shoot in advance so it might be a month or so until we post the burger video.

They call that the cold great technique, You do not get grill marks and I like the way the sear gets using this. SNS Grills makes the grate for spinning over the Slow N Sear. It is really just preference! Cheers!

Gregory Howard, for the cold grate technique, spinning the grate lets the steak sear without the grill marks because you are always moving the steaks to the cooler grate. Since I have the slow and sear, I wanted to try this. I am good either way for the grill marks as long as the steak is done right! LOL Thanks for asking the question!

Grill marks are more for aesthetics. At times grill marks can leave a bitter taste, which is why some prefer the cold grate technique. I personally do not have a preference, a well seasoned and grilled steak is always pleasing!

P JB Check your Costco around the holidays, that is the only time our Costco has them. Not sure about the winter holiday, but Father’s Day, Memorial Day, July 4th and Labor Day they had them.

@@beers-jackofbbq yes how do you use weber for sous vide? Also at about 9:05 or so you say about as perfect medium rare as you could want ? In my experience nothing matches sous vide for perfection of protein doneness.

Ken Roman If I do a combination of Sous Vide and the kettle, I do my steaks to about 115 for 2 1/2 hours and then sear over the hot coals and they should finish about 125 to 130. That would be for a thicker steak. I agree with you 100% about the perfect temps on Sous Vide. Our channel tries to show multiple techniques on different grills and get the same result. Luckily I have 6 grills and we try show how to get the perfect steak, chicken, burger, etc... on each one. Since many home may only have one option, we hope it helps for what they have. Plus I enjoy the challenge of doing this. I do have my favorite ways to do almost everything and if just cooking for me and my wife, I will usually do my favorite way. I appreciate the comments and I am always trying to learn more, so please keep the comments coming! Cheers!

Ken Roman I have never done burgers Sous Vide. I have done them indirect and just did a quick sear at the end. I have also done smash burgers, I got a Kamado Joe case iron grate at a sale and have used it over the slow n sear to smash the burgers. Both turned out nice. You can actually use the drip n griddle pad, just have to watch it does not get too hot.

Why the 100 dollar plus charcoal basket - pure gimmick.The Weber doesn’t need a gimmick. LOL OMG - the cold grate method, that makes no sense. I challenge you to put your hand on the cold grate using the spin grate. It’s just science. No such thing as a cold grate. Too funny.

Challenge accepted! LOL You are correct, you don’t need accessories. I choose to have them for convenience, I can shake the ash off the coals and reuse. So it works for me. As far as the cold grate technique, you are correct again, you could not put your hand on the grate. I am not a fan of grill marks, I prefer to have the sear on every part of the steak.
