haha yeah i thought that was kinda weird. when i think of peanuts, popcorn does not come to my mind. (and vice versa) pretty sure it was all that ghee!

Jason Troll I think her family is a really important part of her cooking experience, so because this is a cooking show she is going to talk about her origins and why these dishes are important to her. I think it’s really great to hear her talk about her family so much. Her family lives in her stories and her cooking. Let people find joy where they find joy.

I remember when I did my first food flip in a hot pan. I was like 15 years old, working as a dishwasher for a guy who was, spoiler alert, a complete a**hole. I had a load of dishes going and all his chefs were busy so he comes back to the little grandma stove in my area and puts on a side of mushrooms on searing high heat. Then like 2 minutes later he shouts back "KID! FLIP THE MUSHROOMS!" I thought, this is my moment to become a chef, so I start looking around and the guy shouts "I DIDN'T TELL YOU TO LOOK AROUND! I SAID 'FLIP----THE----MUSHROOMS!'" "But I don't have a spatula!" "I SAID FLIP THE F**KING MUSHROOMS RIGHT F**KING NOW!" So, I grabbed it and thought back to Food Network and flipped them. I felt so proud when I didn't come out with third-degree burns.

I feel the key to the pan flip is just to go in with confidence. If you choke even a little bit the chances of flinging your food all over the place go up exponentially. Also having a properly non-stick pan with nice sloped sides helps a lot. I've tried it in a cast iron pan with nearly vertical walls and it's very difficult. In that circumstance you almost have to launch it vertically like flipping a pancake.

I’m not Indian but I typically love all Indian food and me being a pretty good cook, I decided to try to make this and let me tell you, it became a full on adventure. Just trying to find all of the ingredients was such a pain and I was trying to be lazy and not drive all the way to my Indian store which is like 20 minutes from my house (actually not that bad but again, I was trying to be lazy). My local grocery store which is 3 minutes from my house did not have black mustard seed, fresh curry leaves (which I expected but was hoping they’d surprise me), dry curry leaves, limes, or even unshelled unsalted roasted peanuts. Why were they missing basic things like limes and peanuts? I have no idea. I ended up buying a little bottle of yellow mustard seed and figured I could just add more like the internet said I could do as a substitute, I bought a little bottle of lime juice instead of a fresh lime, and I bought a bag of roasted shelled peanuts and got to unshelling at home, lazy goals shot. I thought ghee would be hard to find too but it was the easiest, it’s kept near the coconut oil. Then I went on amazon and decided to see if I could have curry leaves delivered the next day but for me they were only offering 25lb bags and this recipe only calls for 10 leaves so I was like wtf, no. I decided to suck it up and make the trip to the Indian store. They had both the black mustard seed and the fresh curry leaves. I get home and start cooking. First try, I get to the point where you add peanuts, forgot the next step, looked up the recipe, read through it, and realized the mustard seeds were supposed to pop within seconds and mine had been sitting unpopped for like 5 minutes because I didn’t heat up the pan at first. I tried a little bit and they tasted burned so I got worried and tossed out the whole thing and started over. Next attempt, the peanuts weren’t browning. Getting worried that I had the mustard seeds on the heat for too long, I tasted them again, and again they tasted burnt. At that point I’m like “screw it, I don’t even know what it’s supposed to taste like, I’m just gonna roll with it”. I proceed to take a few uncooked mustard seeds and throw them in my mouth to see what it even tastes like uncooked. 😳🤪 BAD. IDEA. I still don’t know if I did it wrong 🤷‍♀️ In the end, my favorite part of this dish was the onion and I didn’t really get any Indian flavors other than like peanuts (?). I felt like the peppers should be more pronounced since they were only slit in the middle and by the time they were soft enough to start breaking down in the mixture, the onions were completely brown. If I repeat this recipe, the peppers are going in the pan from the very start with the peanuts to finish with the onions and I’d put the peanuts in before the mustard seed. I also think there should be a step to reheat the rice, so I’d toss everything in the pan on high for a quick reheat.

Replace ghee with peanut oil, add a teaspoon of split blackpeas and split chikpeas each after mustard seeds and roast till brown, followed by half a teaspoon of turmeric powder, replace basmati with any normal indian rice prepared a few hours earlier, skip onions, add freshly grated coconut in the end for garnish with finely chopped cilantro, voila! Its the humble "chitranna"/ lemon rice of south India... :) Can add capsicum and tomatoes with onion too for a different flavour.. Similar ingredients, but taste soo different... Diverse, but belong to one country... India... :)

Made this last night - it's outstanding (esp. when I added more lime juice & salt). And, despite Priya's enthusiasm for ghee, I expect it will be almost as good with easily half the amount of ghee. Which I will test soon enough.

One way one of the chefs i worked for showed me how to the pan sauteing flip. Was the motion of tilting the pan down then up and back(pull back towards you). So down,up, and back. So it feels like a fluent and natural motion. Basically creating a circle motion. Our bodies likes to create and do fluent motions and thats one thing ive learned and have been taught working in the kitchen. If you pay attention to knife skills as well is fluent and smooth the up and down and back and forwards. And stirring. Its all basically circles in different degrees.

I just feel such a kinship with Priya. I'm also the daughter of Indian immigrants raised in Dallas, Texas. I love cooking and my recipes are heavily influenced by my mom's Indian cooking and the Tex-Mex I grew up around. So nice to feel represented 💕

This way of cooking mustard seeds makes them taste bittes.. Your mom is not a maniac to cook mustard seeds on high heat.... Thats how its done...

@@MsTonyabarnes yep.. Dr. Mercola covers this topic in depth.. its amazing to think that something like fried rice is far healthier than regular rice, due to the lowering of the carb count... its great for a low carb life style

My mom makes something similar to this called "lemon peanut rice" ... she adds turmeric to give the rice a nice yellow colour (plus turmeric has wonderful anti-inflammatory, anti-free radical properties). She also adds some other types of lentils in it. It's bomb.

Thank you Priya, the more I learn about the varied Indian cuisines (and just like the US, Indian cuisines are regional) the more I love. To discover this particular simple yet delicious prep blows my mind. And with a well-stocked Indian bodega across the street (even better stocked than Kalustyan's online BTW, FML originally) I am set for life I think. Please teach more, you are awesome! Oh BTW I dare ya to make a biryani on here someday hah!
