i thought recipe books were divided into sections, meat and poultry, side dishes, appetizers, etc. - what section was the recipe located?

Many years ago I used to order lobster newburg at a steak and seafood place. They removed the lobster meat from the main shell and then made the newburg adding it back into the lobster shell. They sprinkled some cheese and bread crumbs with butter and broiled it for color. I believe it was served with rice on the side. I remember that my mom made something with leftover chicken, mushrooms and a creamy sauce over flaky pastry shells.

Lobster newburg is a Christmas eve tradition in my family, and I've started making it myself these past few years. Serving with pastry shells is much better than the toast or noodle alternatives. The sherry should absolutely be added earlier and I was surprised there was neither cayenne or mustard for seasoning. The canned lobster was news to me! Maybe because I grew up on the east coast I expect fresh lobster.
