outstanding work!!!!!!!! I have a couple hundred pounds of tomatoes in the freezer, maybe this will motivate me to process them! Thank you.

Thank you, Cathy! Our deep freezers were getting out of control. It feels much better freeing up that space. Tomatoes are so inefficient to store frozen (long term) anyway since their volume decreases by such a large amount by the time you have them canned. Get those tomatoes canned; you'll feel much better! :)

For processing tomatoes into a passata form which I think you are going for? Boil the tomatoes until the skins are loose, remove them with a spider utensil into cheesecloth in your sink (or container if you want to save the juice), then press the excess liquid out. You are now left with the fleshy tomatoes to process through your mill.

We've done that before and have found it to be more work. The great thing about the Weston Mill we are using is that you don't have to remove the skins. Thank you for sharing your tips! :)

Wow, that freezer of tomatoes! 😲 LOL, good work! My pressure canner only does pint jars--it's a short one. I feel like a taller one might be nice. Great idea to look for a roaster at the thrift store. I didn't grow up with one, so I never thought of getting one. But it seems like I see lot's of homesteaders using them for a lot of things.

Thanks, Jeanette! Sadly all of those tomatoes end up making so few jars of sauce. We love the roaster oven! I don't know how we'd make bone broth without it. We wouldn't mind adding a 2nd, larger one to our arsenal. :)

The “light” tomato juice is great for soup base. I also started PC the tomato sauce so I don’t have to deal with making my sauce more acid. I prefer a slightly sweeter sauce anyways. Just my 2¢. Good job on the beef broth!

Thank you for your feedback, Barbara! It's soup season here so we'll probably use that up soon. :)

I have the second large batch of chicken stock going right now. First batch is in the refrigerator cooling so I can take fat off. Will do the same with broth tomorrow then I will can both batches Thursday. Then I then start on the beef bone broth. I always roast my bones in the oven first to get that dark color broth.

Great tip about roasting the bones in the oven, Colleen! And great job getting in some canning during the "off-season". :)

@@Aprons.Overalls Thank you. Yes I am adding to our stockpile of bone broths plus I canned some venison tips, a LOT of beef tips, and chicken breast tenderloins over the past month. About to can some more pinto beans and my husband's favorite venison chili that he eats year round. I want to get our pantry fully stocked back up on those things before it's time for canning strawberry preserves, fruits, tomato products, pickles, etc.
