About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RU-vid.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

@@vuho2075 6 feet only works outdoors, indoors without ventilation you're at your own risk. Wearing a mask makes more difference anywhere, particularly indoors.

Tried and tasted today. The soup is clear , not oily, taihen oishii desu(very delicious) . Hope to see more simple and tasty recipe where great chef like you all help solve the headache of don't know what to cook at home everyday. finally a seafood heavy Ramen dish without rhe egg Topping. I llike it some varients of Ramen, but a clean seafood (-the pork fat) is so much clean tasting, and excells the broth so much with out muddieng it with yolk richenss from the egg. Hard boiled on th eother end kinda fits better as it's a one bit that won't spill into the broth. Love these vids. Thank you, you are all much appreciated!!

Watching this makes me want to open up a Ramen restaurant with all exotic plates like this, yet I still want the classic dish to be the “Ramen Classic” which is the simple chicken ramen, seasoned and prepared special along with the great Oscar Mayer hot dogs chopped and medium poached egg! 😂😂😂 🍜🙏🏆

Excellent video as always. Just wanted to pass along an alternative to Saran Wrap for covering the mat. They fit perfectly in the 1 gallon zipper bags.

sometimes there is air and not so great for tight fit...and could be too much extra gap in the bag. but if it working for you then great! enjoy!

I think this is the first time I’ve seen a chef taste his food sanitarily, cool that he ladled it into a small tasting bowl, most time you see on tv they dip a spoon in and you know they keep using the same spoon.

I wish I went to the Nova Restuarant when it was still open in Miami. I am in Tampa and would make a trip to Miami just to experience Chef Hiro's food. I thoroughly enjoy your videos and always look forward to the next one. Thank you for the years of joy your videos have brought me.

So some of Hiro's videos are planned out and are mostly amazing, no surprise by now. I recently keep seeing these shopping videos where they go to the store and are subject to what is on the shelf and they end up doing a master class on what appears to be just thrown together on the fly. I get that the guest knows how to prepare ramen to molecular perfection...but they started with the stuff I bought in college and prepared with a microwave and ended up with a Michelin quality meal. I think id actually like to see a few videos where they just get bad ingredients, screw everything up and make a bad meal so the rest of us can feel better about ourselves:)

Korea Dash - Paris to Seoul Jjapaguri? Maangchi and Binging with Babish both did a video. I prefer Maangchi’s channel in general but in this case you might like Babish’s more - he does the movie version and then and upgraded from-scratch version.

after cooking the pork fat, could i use that as the base for the soup stock as well or would it not work because it needs to be in powder form? and how well should i cook the pork fat if i wanted to use it in my ramen as an extra meat but i cut it up?

pork fat oil is just for seasoning touches, not for soup base. Just cook pork fat until the oil comes out...when you see the smoke it is ready to use, not need to cut up if you don't want.

Same method for pork fat, in Vietnam we dice it and toss it in the pan with medium low heat until it over golden brown a little. We eat that with fish sauce and chili. we now put it in everything possible. especially in noodle soup. It has very strong and addictive flavor. We call it, Tóp mở. you can find it on goolge with that name.

I'll definitely be trying that hot oil-to-Ichimi (or red chili flakes + cayenne?) trick, and for some reason that hot bowl method seems like such a no-brainer, but I never thought to do that and the importance of a hot bowl receiving a hot soup. Ha! Very cool video with lots of little nuances.

Absolutely nothing wrong with mixing proteins. The pork I had set aside for the chashu was gross so I discarded it and moved on with making my broth. I decided to use a bag of frozen squid and some bay scallops I had and it was absolutely wonderful and a beautiful combination with the Tonkotsu ramen broth.

Genuine question: how do you eat the shrimp? I'm not seeing a lot of room to peel the shell off, so I'm curious. :)

Just suck the juices, remove head and peel shell. Of course your fingers will be involved unless you're really good with chopsticks and your mouth!

An outstanding, awesome well done "boost" to enhance ramen noodle soup! I've made a similar "Super Ramen soup" with shrimp. Just without scallops. I did though add pot stickers and boiled eggs as well to the soup. All of which made for a protein energetic powerhouse. I will have to add the scalops and some, muscles,squid and or octopus as well for a real powerhouse seafood super ramen soup. Gentlemen, please keep the outstanding and awesome helpful informative, educational videos coming!
