3 cups (480 ml) whole milk
8 egg yolks
2 teaspoons vanilla bean paste, or pure vanilla extract
For the Choux Pastry
1 cup (240 ml) water
½ cup (113 g) unsalted butter, cut into pieces
½ teaspoon salt
1 cup (130 g) all-purpose flour, sifted
4 large (200 g) eggs, at room temperature, slightly beaten
For the Chocolate Drizzle
4 ounces (125 g) semisweet chocolate, coarsely chopped
½ cup (120 ml) heavy cream
