This week I'm kicking off a new series called Protip where I partner with a professional bartender on tips, hacks, and recipes for the home bartender. I see this being useful for batch making drinks in a bar, but as a filthy casual I'd say shaking up a good drinks is half the fun. The other half is drinking it myself :P

Bruh, you hit it right on the head. If I was a professional, I could see this becoming an issue, but us filthy casuals can certainly enjoy a little shaking from time to time, unlike babies 😆

c'mon now. It literally takes 45 seconds to clean two shaker tins, lol. Less time than it does to drag out the vitamix. I appreciate the video though. :)

Rinse both tins and chunk them in the top rack of the dishwasher while the foam layer is settling on the sour. No wasted time, and you're probably next to the sink anyway.

Something is use for people that request a shaken cocktail or when making camping cocktails: blender bottles. The little wire ball is awesome for a dry shake. They also seal well and are a cinch to clean. You can also stack and strain a rail of drinks to show off a multiple pour.

i appreciate the tip, especially for batched drinks. seems like a no brainer. but let's be honest, you did not give that first drink a proper shake, hence why there wasn't much foam.

I switched to mixing my whiskey sours in small bowls. I use a spiral whisk to foam up the eggwhite in the drink. Works better than I could have imagined and is a nice evening workout. Cheers! Edit: Forgot to mention, that the glass of my boston shaker broke...

anyone who has had to shake a bunch of egg white cocktails using a shaker has felt this pain. Yeah you can solve for it in different ways, but this technique was a gamechanger for me when making multiple eggwhite cocktails. Try it with a ramos gin fizz

So let’s say I have a ten drink ticket, Whiskey sour Espresso martini Pisco punch Ward 8 Hemingway daiquiri Aviation Jungle bird Another whiskey sour but with a different whiskey Margarita And a mezcal last word. How on earth does one execute this order in a timely fashion with a blender, even if you do have three or so on hand….I’m not seeing any time saving technique here

Hot soapy water and blend it again, it's easy, and no cleanup on the counter. Now that said. I will still be using my cocktail shaker for single drinks. But this is amazing to bust out for gatherings (when they can happen again)

Honestly when it comes to cocktails I usually just rinse it while it's still wet. There's not a lot of fat soluable stuff in most cocktails so a rinse with hot water does the trick pretty well.

I'd much rather clean a shaker than a blender! However, for a batch of 4 drinks this definitely would be a much better choice. I'll try it out, but not for just one drink.

Also Japanese shakers are really easy to properly seal if you can't do so with other types of shakers. I really don't understand how this is better in any way.

My shaker isn't even that great and I can still get a nice seal and a clean shake. Very odd advice coming from a master of his craft.

Definitely an option for a party. Great tip! Don't think I would use it to do just a couple of weeknight/end of day cocktails. I think it's easier to wash my CK shakers and strainer than my large blender and lid. And there's an element of relaxation in shaking and pouring that first cocktail after a long day at work. Just my thoughts :)

Definitely agree. Plus I find I get all the foam I need by adding a protein powder shake ball to the tin when I shake. Also, my blender is kept in a cupboard and getting it out and setting it up is way more effort than just grabbing a shaker off the top of my bar.

I agree there’s a lot to be said for the motions of making a day-end reward. The nice thing about the blender is it makes you feel better because a sour has an egg, and an egg is protein. This makes a cocktail a “recovery shake” after a hard workout because you ALWAYS blend those.

Personally, cleaning a shaker and strainer would be easier. However, doing several of the same cocktail at once would make sense with a blender

Exactly. You can only feasibly shake two drinks in a shaker, but it doesn't make sense to blend a single drink either. I've never had more than a few drops leak from a shaker.

I love my shaker, but this gives you a great option in a pinch, like if you're at a friend's place and you need to whip something up without your tools.

I use a Mason jar as a shaker. Depending on the drink, either a pint or quart jar works well and is a snap to clean by tossing it into the dishwasher.

I think this would be great for batching. But personally, I think for single drinks it is more of a pain to clean the blender than to throw the shaker and tools in the dishwasher, or to give them a quick rinse between drinks

This seems pretty controversial. I feel like I never have an issue with spillage or stickiness when it comes to shaking cocktails in either a Boston shaker or cobbler shaker. And a blender seems overkill if you’re only going to be making one drink.

Depends, one of those small smoothie blenders might work pretty well, and I can see this being very neat if you are making like 10 whisky sours back to back at a house party (speaking from experience, that is straining AF on the hand). I slso think this Mahone shows that you don't need to go and invest in a whole bunch of tools to create good drinks

Part of the shaker is the flair too, and blenders are so noisy, and I think even quiet ones would miss out on that satisfying ice shaking noise

If you're making something pretty tame in terms of gunking up the blender, especially a Vitamix... throwing some water in after using, blending, then rinsing with hot water is pretty much on par with cleaning a Vitamix. A single drink makes less sense, but multiple makes a lot of sense. I think the quantity is the game-changer here.

Ever since I switched to an Elevated Craft shaker, I’ll never use a Boston style shaker again. It’s the best shaker I’ve ever owned. The blender idea is fine and all but there’s a magic to creating a cocktail the traditional way that I can’t forgo for the sake of convenience. Call me old school. 😎🥃

What's the difference between an elevated craft shaker and a martini shaker? I hate martini shakers, they don't strain well enough and so many times I've had that lid stick on me permanently. So I'm always reluctant to ever use something that looks like a martini shaker

Hi! Im eze, Argentinian competitor in many cocktail tournments IBA and others and bartender with 10 years of experience in bars, hotels, pubs, disco and restaurants... YES! the use of a blender machine is great WITHOUT ice! the best foam by far is with a blender ALWAYS! WITHOUT ICE! why? cause every pice of ice that you put in a blender is gonna end as water in your cocktail and that is something you like in a FROZZEN cocktail but not in a family of martinys or creamy cocktails, etc... The dilute amount of water is not comparable to a proper shacke technicke. Another way is the use of swizzle stick direct on the glass, really easy to clean, cheap and simple to get.

Dunno, I don't understand how cleaning a shaker is supposed to be hard. Just immediately rinse and let it dry. I do understand using the blender if you have many guests and the same drink aka if batching. But as some have said, it is more gratifying to use a shaker. Also it doesn't take nearly as much space as a big and good blender. Interesting start for this series!

Sounds like Jeffrey just has a shit shaker then. Got me a nice Parisian shaker from an antique store and it never leaks or spills anywhere. Much easier to clean/rinse than a blender too.

I love the idea for this series, Nick. Big kudos for getting someone as reputable as Jeffrey Morgenthaler to start this series off the right way. I'm not sure how often I'll use this tip personally -- I find cleaning my shaker cups is easier than cleaning my blender. But it's good to know this is an option. Honestly, the part that interests me the most is the efficient use of ice.

Thanks for sharing this - fun series! Jeffrey Morgenthaler's blog and book are what got me seriously into home bartending and his Amaretto Sour recipe was one of the first "real" cocktails I ever made. I use my vitamix for aeration in tiki cocktails, but personally I feel like using a shaker makes me feel "cool" and more like a real bartender when making drinks at home - hah.

I’d suggest against using stemless wine glasses. They look really nice but you end up messing with the temperature of the wine if yoy don’t drink it really quick

Stemless glasses are for sit-down dinners, where you don't hold the glass for more than a few seconds at a time, they are also harder to knock over, being ~half the height, thus a smaller target.

Hey Nick, great new series! Love your channel. For big crowds I sometimes use a blender, but honestly: for myself I only shake. It just has so much more style and I hate the sound of blenders. Style shouldn't be neglected when making cocktails. Keep on the good work. BTW amaretto sour is an awesome drink (like almost every sour)! Cheers!

It might be nice to do some home experiments and comparisons. But as a pure amateur I've never had issue with it getting everywhere. Maybe once, but not on any kind of regular basis. And for one or two cocktails as others have said the blender seems overkill. But I do like that foam head.

Nah, he's limiting the dilution by only adding a 1×1×1 inch cube per cocktail. He said that won't over dilute and it will cup sufficiently. I'm guessing this only true for some cocktails so, you might need to adjust depending on what exactly you're making. A hurricane, for example might need more sure to it's sheer volume.

I've done this for a while for foamy cocktails and the cleaning thing seems like a strange justification. The big reason the blender is better is the level of aeration you can achieve. If you take your first sip before the head starts to separate out the difference becomes clear immediately. The mouth feel and even the taste are vastly different for the first minute or so out of the blender. As the foam head forms the difference from shaken slowly disappears.

Clever, but I think I'd *really* much prefer washing a shaker instead of washing a blender, because I've never had a blender that wasn't a pain in the ass to properly wash. Washing my shaker is just washing a couple metal cups. Especially if I plan to use the shaker again that night, where a rinse suffices until the end of the night. I prevent shaker mess by shaking over the sink.

I use a SECURA ‘Automatic Frother and Hot Chocolate Maker’ [ model F280R ] much like the blender was used here, for my drinks. I use the cold setting of course, but it will not break down an ice cube! I add some crushed ice after frothed but not while it’s running. Then froth a bit more to get your chill on. The SECURA can live on the countertop so it’s very handy, unlike a cumbersome blender. Super easy cleanup. I make a Tequila Sour with the egg white variation like a Boston variation of a Whiskey Sour. 1 part fresh lemon juice.(often I get 3/4 oz from half of a lemon. So I measure the lemon juice first and call that 1 part) 1 part simple syrup. 2 parts Tequila. Half an egg white, about an oz. (The pasteurized egg whites in the small carton are great for this. And you won’t have to toss an egg yolk or find a use for the yolk.)

Plz have my boss Erin Gaughan from Revolution Hall on for her drink inspired by Marie Curie! It's the most drunk signature cocktail every summer in the Pacific NW. Plus I signed up for Trade coffee and it blows Starbucks out of the water. I pull great shots out of my ISOMAC Venus and shake them in cocktails like the Shakerato, or stir the beans in a Manhattan.

I don't think I would pay $15 for a cocktail out of a vitamix. Oh it's an expensive piece of hardware but for cocktails?

Hmm. You can easily get that much foam if you shake more than 15 seconds. So... use a blender when making multiple drinks at once? Thats a "game changer" for you?? No one making 6 or more of the same drink at a party uses a shaker unless they dont have a blender to begin with. This is like "Protip: use a larger glass to hold more liquid"...

Recently backed and received the Elevated Craft cocktail shaker from Kickstarter which aims to solve a couple of the issues mentioned in the video. To my experience it delivers on its' promises: No leakages (lock design + gaskets), No counter mess (double walled so no condensation puddles), less clean up (integrated measurements) and larger size for multiple drinks at once. why is it harder to clean 2 cups than a blender and blades? I think this idea is greta for pros who are making 2,3,6,15 cocktails all at once, but if you are at home you can get results just as good if you dry drshake a bit more vigorously and go easy on the ice. You can get a lot more foam with deep freeze ice (-30c) and a faster horizontal shake.

If I'm sitting at the bar in a fancy cocktail place and I'm expected to pay $15+ per drink, I would feel absolutely disappointed if the bartender just dumps batches of drinks in a blender every couple of minutes, not to mention the noise from a blender with ice cubes ruining the conversation... The taste of a cocktail is just part of the experience, seeing the craftsmanship and enjoying the experience is a big part too!

Wow that really is a difference in foam, I am not sure I will go to this method right away as I have small child that is usually sleeping when I make a cocktail. But might give the Immersion blender a try next time. Also I think for sure I'm gonna give his Amaretto Sour! I used to love them when I was young, the "gross" ones, and haven't tried it again in awhile. Love the Strong Bourbon in there!

I love Jeffrey and this definitely works better than shaking (less ice wastage too), BUT... How the hell is he getting cocktail all over his cabinets? I've literally never had that happen to me while shaking a drink. What I like this technique for is making more than one cocktail at a time... but for one drink it doesn't seem to save anything on cleaning (how long does it take most people to rinse out a shaker?), doesn't seem to save any time (seems longer if anything) and I'm still super confused how either of you are making a mess even with dry shaking, let alone once ice is added.

I disagree on this method. I've tried blending egg white drinks over the years to get better/faster emulsion, and it always comes out "chalky" to me. Coats the mouth in an unpleasant way, instead of the smooth creaminess the egg is supposed to provide. Same thing happens if you dry shake a cocktail for an extended period, like 10+ minutes. Additionally, this method is going to make a blended ice drink even in the best blenders unless the temperatures are all perfect to completely melt the ice. I would need to fine strain anyway. For larger batches I see the appeal.

Blender is a versatile tool in the bar, most definitely if you have a group ordering 12 espresso martinis/ whisk(e)y sours all together, but i believe its all about technique on how you shake to get that thiccc foam. I will still not sub my double tin with a blender if Im working. I also use hand blender as some eggwhite cocktail does not yield the same amount of thicc foam. But nothing beats the sound and style of shaking. Cheers

Hi, could you please do this experiment again but with a non-egg white shaken cocktail? I'm curious on whether or not that will create more foam. (I assume it would, but I don't have a high powered blender like that at my home).

Back in the 80s people wouldn’t shake cocktails they would use a milk shake whipper to aerate drinks. As you can imagine this was horrible as it didn’t add any chill or dilution to the cocktail. Morghenthauler being the mcguyver drink life hack wizard that he is found a way to achieve this goal with one easy step.

Since i'm starting with cocktails, i'm using my whey shaker, and with it came a little wire ball to agitate things. It's working great with egg white stuff so far, but i haven't seen anybody using that "trick". Maybe you should try that sometimes !

I just use a cobbler shaker at home, or even sometimes just a gosh darn protein powder shaker. Way less mess, way less of a hassle, and perfectly sized for a home bar. And in my opinion, it just looks classier sitting on a shelf next to some spirits. Edit: The cobbler shaker looks classy, not the protein shaker.

I think you could one up this technique by straining while puring into the glass. The Educated Barfly found out that this produces a more stable foam with smaller bubbles compared to open pouring

Blenders take ages to wash properly. Not ideal for a bar unless you are batching 5+. More foam isnt better either. Are you trying to create a buffer from the spirit/lemon/sugar? Or trying to literally make a merringue dessert?

If you want to make foam stiff as the blender without the broken ice, throw the spring from the strainer in to the shaker for dry shake. Second trick is to foam the egg white cocktail mixture with immersion blender before adding the ice. With these tricks you won't water down/get the small ice shrapnels in your cocktail.

Interesting - I use a Japanese shaker and only have mess issues with eggwhite cocktails (the foam causes pressure and blows out the sides). I'll definitely try this with my eggwhite cocktails (esp for that beautiful head of foam!). My bartender suggestion is Sother Teague of Amor y Amargo in NYC.

(I learned to dry shake the eggwhites in the shaker, but perhaps beating/whisking them first before putting them into the shaker would help prevent the pressure from building so much!)

Just because you don't know how to dry shake properly it doesn't mean the other technique is better... I can get more foam then both those 2 cocktails together and no, not with a revers dry shake. Plus if you use cheep tools of course your going to get a bad seal. A good heavy big tin with a softer small tin creates a gasket effect.

I’m all for doing things the easy way... but cleaning the blender is way more of a pain in the butt than two peices of metal. So I’m on team shaker for this one, no competition. Also how on earth is he getting cocktails on his cabinets? I get having drip line down the side, and so I wipe it, but how does it go everywhere? How is he holding it? Is he throwing it?

If you're worried about a mess, why not use a plastic blender bottle (like the kind you might use for protein shakes at the gym). They are cheap, easy to clean, and seal easily so no mess.

I, like others, really don't see the issue with a shaker, especially from somebody who is hailed as a master of his craft. People often complain about cobbler shakers but I use one at home, and a boston shaker has never leaked for me either. I just don't get this issue of mess.

in what world is cleaning a blender easier than cleaning a cocktail shaker? and how is a pro bartender somehow unable to use a cocktail shaker without making a mess? literally never happened to me. the foam is neat though i guess.

I have never had a problem with my metal shakers. Just start slow with the ice to chill the air inside to create the small vacuum inside and make the metal half's pull into each other. But if thats how he does it then fair enough Ill still be using my shaker though. With egg white cocktails just dry shake first then add the ice dont see how this is much better really also you did not dry shake the egg white enough whats why you only got a small head its not that hard to see. But hey thats just me
