fasting period is preferably just water...but i see no harm in having it as a bedtime drink or early morning drink...hope this helps.

How can rice cooked in excess water and strained have its nutrients?? Rice is rich in B vitamins and all of this is water soluble and lost in the cooking water. If you are consuming the strained water and kanji in another form it is ok, otherwise just the rice alone will not contain the vitamins and micro nutrients it is so rich in!

Hello Mam, Maria here... I'm a researcher in food technology, specialised in micronutrients and oils. We had conducted a research to know the nutrient value of the rice cooked in open pot where starch is filtered, the same filtered starch water was also analysed and compared to the one cooked in retaining the starch (pressure cooking). To start with rice has 3 parts- bran (outmost layer after husk is removed), endosperm, germ (inner most one). The bran is comprised of majorly crude fibre, fats, vitamins (in the order); endosperm is the starchy layer; inner core germ is densely packed with Vit E, B and fats and minerals. By filtering the rice starch, 1. it removes extra starch bound to the endosperm. 2 thus increasing the micronutrient content i.e. helps the bound micronutrients to be released from the germ, while the unfiltered starch keeps the micronutrients still entrapped. So filtering the starch, generally improves nutritional value, in such a way that arthritic conditions and several other classes of pathology seem to benefit considerably. 3. Also filtering the starch water after cooking with the right amount of water makes the resistant starch to be retained in the rice, which improves bone density by enhancing the absorption of calcium and other minerals in adolescents and postmenopausal women. 4. The laxative effect of resistant starch increases the ease and reduces post-meal blood sugar spike by slowing the absorption of glucose into bloodstream. If the starch isn't filtered there's a immediate high blood sugar spike. The value of this procedure is to make the most soluble carbohydrates to be removed from the rice, so sugar loading is decreased. Thus, causing less impact on blood glucose levels and releasing the bound micronutrients from the germ. Whereas the drained starch water was high in starch and less in vitamins like B (negligible presence) compared to the rice from which the starch water was filtered.
