Puerto Rican Chicken & Rice 

This episode of Good Mood Food highlights my mom’s Puerto Rican Chicken & Rice which I love oh so much and think you will too! My mom and grandparents are full Puerto Rican so growing up we often had rice and beans which is why I had to whip up this nourishing weeknight meal with homemade adobo seasoned chicken, sofrito and arroz con gandules (my favorite kinda of rice!). This is one recipe I love because it taps into my roots, creates nostalgia and brings up incredible family memories of my mom making this for me as a kid. I hope you enjoy this one!
