The diverse, rich, and multi textured food within India is beyond the normal, safe, and boring. From this culture I find Bengal's food is best in terms of process, presentation, and expense. It is known as food of the Gods after all. The fish dishes being among the best offered to everyone. I'm executing this tonight albeit my help in India and the fresh ingredients.

@ Bhojohori Manna: I don't want to be uncharitable. But please do keep in mind a few things for the sake of your customers. The eatery at Esplanade, Kolkata, is a wormhole at best. Restaurants need space and a classic restaurant needs more of that. I will never try Jumbo Ilish Bhapa post monsoon. It was just tasteless. On another occasion, my daughter experiencing her first lunch at Bhojohori Manna, left the better part of the mutton dish on her plate as it was hard and took real effort to chew. Needless to say that we are Bhojohori Manna enthusiasts no more.

Firstly, Bengali traditional recipe never cooks prawns with shells. Tomato paste and yogurt is not used in traditional Prawn Malai curry. Aar traditional Bangali rannay kobe theke ‘kashmiri red chili’ use kora hoto? Amar Ma korten without tomato paste, yogurt and with ordinary shukno lonka Bata. What taste and colour! The red colour comes from the ‘ghilu’.

Today,the preparation for any item is virtually same.All ingredients are common for any menu This helps preparation of any item called for while eating in a restaurant,faster.Just add the main ingredient like lobstar, coconut paste & milk in a common mix.High time we should learn the traditional method of cooking from our grandmas before we post in youtube.
Bengali eateries seem to have developed a standardised gravy for all their fish and meat items. It comprises of a paste of onion, garlic, ginger, tomato and/or coriander. Hence, the base of all recipes appear similar. Here, the chef could have done away with the dollops of ghee and used pungent mustard oil instead. Prawns taste far better when prepared with mustard and coconut milk. Tomato paste was unnecessary too. The dish could have been finished with a dash of lime juice.
Good but my Bengali grandma from Dacca, Kolkata use to cook with the least of masala. Malai curry meant cooked only with coconut milk. No garlick,no doi. Only tejpatta, elachi,onions and ginger at the end the coconut milk. But cleaning the prawns is most important
Bogus. Authentic Bengali Chingri Malaikari recipe would never have tomato or tomato paste, yogurt/curd in it. This is Punjabi or north Indian influence. and the funny part is the chef cooked the prawns for almost 20 minutes... as if big restaurants will share their secret recipes willingly... but the anchor's enthusiasm, curiosity and high pitch commentary was hilarious.
Arpita Roy there is nothing called authentic ...trust me every individual in every house cooks differently ...and who can vouch for the authenticity ??? how authentic will that person's comment be ?? there is nothing called a fixed / authentic recipe .... what you feel AUTHENTIC might be BOGUS for someone else ...at the end of the day all it matters is the taste ... if the food is good the cook has done justice to the food :)

I had food in the place..food is awesome..and abt txt shrimp.. In Kolkata people eat like that..whole..not only tail.. All the taste r in the whole shrimp.. The fisher already took veins out..

me and my friend went to bhojohori manna at Hati bagan near star theater......we took Dub Chingri, Basanti polao,lau ghanto and many more....this is the worst food i have ever tasted,,,,,,shit shit and shit......very poor quality food......i paid 1800 and which was not worth for this dirty bullshit food......Chi chi chi..........i have written in complain book 17 th february 2016...Biswajit choudhury from barasat..anybody go there and check that bullshit book.....many people complained on that...........its better to have food in bhajohori ranna which is located in Birati more.......
The name malai Curry comes from cooking the prawns in the shell or Mala of the coconut. So this is not an authentic curry. Also the prawns had not been cleaned and deveined. Health wise it’s a 👎 from me. And all that water, tomato and garlic. It’s just prawn curry with coconut milk. Bah!
I am following only this recipe since last 6 years and every time it gives me a mouthwatering malaikari ..there are many others videos but I found this one best 👌

super unhealthy recipe... this guy puts ghee in every recipe.. when you put so much of ghee everything will taste better ... tomato paste, curd, ghee in chingri malaikari.... seriously?
I think if you want to eat a dish like chingri malaikari you gotta be open to the heavy calories that come with it. Besides research shows ghee in moderation is beneficial to health.
