These Pumpkin Breakfast cookies are dairy free, gluten free, and egg free. They are perfect as a quick breakfast, great for lunch boxes and make a delicious (vegan) afternoon snack.

PUMPKIN BREAKFAST COOKIE RECIPE
1 cup quick oats
1 cup rolled oats
1/3 cups ground flax seeds
1/3 cup chopped walnuts
1/3 cup chocolate chips (make sure to buy dairy free if you want to keep recipe vegan)
1/3 cup dried cranberries
1/2 cup pumpkin puree
1/4 cup maple syrup
1/3 cup melted coconut oil
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1 teaspoon baking powder
1/4 teaspoon kosher sea salt
Preheat your oven to 350ºF.
Line a rimmed baking sheet with a silat mat, parchment paper or lightly coat with cooking spray.
In a large bowl combine all the ingredients and gently stir until you have a thick, sticky batter.
Scoop a heaping tablespoon of the batter into your hands free form your cookie. They don’t spread much in the oven so make sure you have created a round flat disc-like cookie shape (see video for example).
Get 12 cookies on your tray and bake for 15 minutes. Cool and enjoy!
Cookies will last up to one week stored in an airtight container in the fridge.

Thanks for a great recipe! Would you measure 1/3 of the coconut oil solid, then melt it afterwards, or do you melt the oil first and then measure 1/3 cup?

@Clean & Delicious, you said these cookies would last up to a month.....well, my 15-year old son and I proved that wrong, as these cookies don't last even a WEEK because they are SO FREAKIN' #DELISH!!!!!! I used this recipe and made it into granola bars, and it was fatastic! It totally got me into the granola bar face. ( I was in muffin face a while ago.) Now I am like, let's see who else has a good granola bar recipe, and after watching about ten other recipes, this one remains my favorite. Truly clean and delicious!!! Thanks, Danny! Great recipe! Thanks Dani. I didn’t have quick oat and pumpkin pure, so substituted them with LSA mix and home made apple sauce. Also didn’t have cranberry in hand, so didn’t add it. Still the result was awesome! They are super delicious and healthy! I’ll make them again :)

Dani!! I did these with smoocshed up dates instead of sugar !! No difference than real sugar !!

@@fatemarahman9288 I did the same as the amount of sugar used in this recipe. You would have to measure. 1/2c of dates replace 1/2c of whatever the sugar source is, the dates are really sweet and extremely healthy, you may even use a bit less though.I use them a lot when making treats. I add a little water to them and run them in the food processor or blender. Let me know how it works out. Peter

Hi Dani, I tried this as a granola and it was delicious! I left out the baking powder and added the chocolate chips after it was baked at 350 for 4 or 5 rounds of 10 minutes intervals stirring each time till it got as dry as I wanted it. Oh it smelled sooo good baking! Thank you for the recipe!

If you soak the rolled oats overnight (in water), they will mix in better. I haven't tried this yet, but I usually soak my oats in advance.

wow, I do a version of these as well but with ripe bananas, so obviously you're brilliant, LOL. Have you had luck finding dried cranberries with no added sugar? I haven't. I'm always trying to cut sugar so I leave those out and put in pumpkin seeds instead.

Zig592 flax seed is a binder. You can use egg, or applesauce is a binder as well.

Try taking 1- 1 1/2 cups of rolled oats ground into oat flour in a blender or food processor instead of using the quick oats. Also use the rolled oats in the amount Dani said. It's still all oats.

These look yummy but I'm wondering if we could switch out coconut oil for a healthier oil like sun or safflower oil and use agave nectar instead of maple syrup. There is controversy over the benefits of coconut oil so I prefer not to use it. I try to stay away from butter as well but I do use it in baked good. I don't make baked good very often so I feel like including butter during those times isn't a problem. I'm not vegan so I guess vegans might want to consider using 0 trans fat vegetable shortening over coconut oil but I'm not sure about that.

The reason I mention agave nectar is because of it's low glycemic index. There are definitely some benefits to using maple syrup but it does not have a low glycemic index as does agave nectar.

rebeccasewing Other oils will make for slightly less firm cookies, but not by much. And agave is a perfect sub for maple syrup in baking like this.

rebeccasewing hi Rebecca I just wanted to let you know that agave nectar has now been found to not have a low glycemic index. I know this because I have polycystic ovarian syndrome and must keep a watch on insulin resistance. I need to watch out for foods with high glycemic indexes. I was using agave nectar and loving it, but recently found out that it had been taken off of the list of low glycemic sweeteners or Foods. I verified this on the diabetic website after I heard dr. Oz make an announcement about it. And I also checked on the site of a doctor named dr. Weir who is famous for being a heart doctor and overall health specialist. But it was the diabetes Foundation of America that really hit home with me. Not trying to criticize just trying to spread the news. Now I'm trying stevia but be careful if you have any allergies to ragweed or chamomile do not try stevia it comes from the same plant family. Honey and maple syrup do have health benefits especially maple syrup I was surprised to find that it is anti-inflammatory and when not overused is okay for the non-diabetic. Good luck

Sorry I just wanted to say something about coconut oil, I did a lot of research about it and if you use the correct coconut oil it is actually very good for your health. They have actually been testing it on Alzheimer's patients and having very good results yes. But not all coconut oils are created equal period for coconut oil to be healthy it must be cold pressed, virgin / unrefined, unbleached and only have coconut oil in it nothing else. I found one that was very good it is cold Nutiva. It is pure and made this way that people have been eating it for years. You can find it on amazon.com. Oh and it is non hydrolyzed, GMO free and organic. Plus the company contributes to reforest ization. Actually sunflower oil has now been linked to some heart diseases. I know you just never know what they will say next. I do know that one coconut oil first came out I bought it from a company that I had always bought my oils from then I started to hear different things period after researching it I bought the kind with the recommended regulations that I told you about and I saw that there is no comparing the two. Just wanted to pass on what I have learned.

Again I am going to make some for myself and the dogs with some substation. Hold the walnuts for my overweight dog. Change out the chocolate chips for chopped apples and trade the cranberries for blueberries so that the blueberries and the ground flaxseed can help with their joints on days when they can't take the doggie aspirin. Pumpkin pie spice is poison for dogs so I will sub some puree Pumpkin powder. Cut the cinnamon and salt out completely. I am just going to have to think on what to substitute the Maple syrup for. I don't want them having to much sugar and the fake stuff without sugar can kill the dogs. Don't want to use honey because the sugar. Do I need something sticky for it to work? Maybe homemade pure peanut butter blended with some banana would work?

Hi Too crumbly! Fifficult to make the cookies, I put them in a Muffin tin. •Next time I think I'll add Egg.......but I wanted to follow these directions like this, and for my Niece who doesn't eat egg.

You should do a list of your pantry items, the things you you most of, like maple syrup, rolled oars, flax seed and hiw you buy them, is their a better place than others to buy these items, hiw do you store them, thungs like that, thank you so much for your videos, keep them coming

jingrassmama It will be slightly less firm, but the sub will work. Olive oil might be too strong in flavor, but that's up to you.
