Ingredients: (6-8 large cookies)
1 cup ground oats
1/4 cup rolled oat
1/4 cup sugar
1 tsp cinnamon
1 tsp pumpkin pie spice (recipe below)
1/4 tsp salt
1/2 tsp baking powder
1/2 cup pumpkin puree
1 egg1 tsp vanilla extract
1/4 cup olive or coconut oil
1/2 cup unsweetened shredded coconut
1/3 chocolate chips
[Pumpkin Pie Spice Recipe]
4 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1 tsp cloves
Directions:
1. Preheat oven to 350F (180C)
2. Stir together the oat flour, oats, sugar, cinnamon, pumpkin pie spice, baking soda, and salt in a large bowl
3. Whisk together pumpkin puree, egg, olive oil, and vanilla in a medium bowl
4. Scoop about 2 tbsp of dough and shape it into a cookie. Place on a baking sheet and continue until you have about 6-8 cookies
5. Bake for 15-20 minutes or until fragrant and enjoy!
