Finally a NOT Cakey Pumpkin Cookie

I’ve perfected the BEST recipe for pumpkin cookies! Mine is perfectly chewy (and not cakey thanks to my tips!), full of festive Fall flavor, and drizzled with a thin layer of sweet vanilla glaze.

Ingredients
1 cup unsalted butter melted and cooled for at least 15 minutes (226g)
1/2 cup granulated sugar 100g
1 1/2 cup light brown sugar firmly packed (300g)
1 large egg yolk room temperature
2 teaspoons vanilla extract
⅔ cup pumpkin puree blotted (weigh 165g before blotting, 130g after blotting) ¹see notes in recipe for instructions on blotting)
3 cups all purpose flour 375g
½ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon salt
1 teaspoon pumpkin pie spice click the link for instructions to make homemade pumpkin pie spice
Glaze
1 ½ cups powdered sugar 190g
1 ½ -2 Tablespoons milk
1 Tablespoons light corn syrup²
1/4 teaspoon vanilla extract

Instructions
00:00 Introduction
00:19 Combine melted, cooled butter and sugars in a large bowl and stir well.
00:58 Add pumpkin, egg yolk, and vanilla extract and stir to combine.
02:01 In a separate, medium-sized bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice until well-mixed.
02:26 Gradually add dry ingredients to wet (I do this in 3-4 parts) stirring until ingredients are thoroughly combined.
02:49 Cover bowl and chill in the refrigerator for at least 60 minutes.
03:01 Once dough has nearly finished chilling, preheat oven to 350F (175C) and prepare cookie sheet by lining with parchment paper. Once oven is preheated, remove dough from the fridge and scoop by 1 ½ Tablespoon-sized scoops. If desired, roll into a smooth round ball.
03:39 Bake on 350F (175C) for 13-15 minutes and allow to cool completely on baking sheet before adding glaze (if using).
Glaze
03:50 In a medium-sized bowl whisk together powdered sugar, milk, corn syrup, and vanilla extract until smooth and the drizzle that falls from the whisk holds its shape for a second before dissolving into the bowl. If icing is too stiff, add a teaspoon more milk at a time, if it is too thin add a Tablespoon more powdered sugar at a time.
04:33 Hold completely cooled cookie firmly by the base and dip the surface directly into the glaze (alternatively you can just use a spoon to drizzle the glaze over the cookies). Return to cookie sheet or cooling rack to allow the glaze to harden (about 30-60 minutes) before enjoying.
Notes
¹Blotting the pumpkin is an important step that keeps these pumpkin cookies nice and chewy and not cake-y. To blot, simply measure out the pumpkin puree and place in a bowl. Press a folded up paper towel into the pumpkin repeatedly to extract as much moisture as you can. Repeat with more paper towels until they are no longer picking up substantial amounts of liquid. You can see this technique demonstrated in my video.
²Corn syrup is not the same as high fructose corn syrup and it gives the glaze a shiny finish and helps it to dry hard. If you prefer you can leave it out, but you may need to add a splash more milk.

I decided to use your tricks and basic recipe to make ginger snaps Of course I added Extra ginger and nutmeg plus 1 teaspoon of coconut flour with my evaporation method . Made them very thin .Baked on 350 without parchment paper added a tiny bit of oil to the pan and cooked on the top rack .When the cookies were pretty much done I put them under the broiler for a minute and wow. Crispy and delicious. Also whenever I'm experimenting with cookies I always do a test cookie and if it does spread out too much I add a teaspoon or two of coconut flour if I want crunchy cookies. If I want soft cookies that won't crack I add about a half a teaspoon of xanthan gum. Granted I live alone so I usually cut the cookie recipes in half .Thanks 😊

Great tricks of the trade and also there is water in your vanilla extract and you can use the evaporation process by placing pumkin and extracts in a non stick frying pan and heating on low until dry .

I just tried out this recipe for the first time today because I had extra pumpkin puree from another recipe. They came out absolutely delicious! 😍 Wow! I didn't add the icing, they are yummy on their own. I love a soft chewy cookie and this is exactly that❤

I had a few cans of pumpkin left from Thanksgiving & wanted to find a way to use it. Baked up 2 batches of these last night. Cut back on the sugar a bit but otherwise followed the recipe exactly. Nice, flavorful, chewy cookie but did not come out flat. Even after hours they remained domed...but certainly didn't affect the taste. Will definitely make these again! 🍪😋👍

My 86 year old dad must have something to dunk into his morning coffee - biscotti shape with this recipe & we should be 👌!

Yeah!! Cookies that are real cookies! I will try with sweet potato puree (I didn't baked my pumpkin for puree cause they are my fall decoration at the moment and I want to try these cookies as soon as possible!) Sweet potato puree seem to be the exact "dry" texture that is recommanded. Thank you for the recipe :)

Definitely a cookie consistency, not cakey but didn't flatten very all and needed more pumpkin flavor. I rolled mine in sugar before I baked them, like I do with my ginger cookies.

Hi Sam, I made these cookies, the flavor was delicious, but mine didnt come out right, they didnt deflate, LOL, they were delicious, but cakey, Im dont know what I did wrong, but Im sure I did, help..LOL...Im gonna try it again, my family loved them. Just needed your advice😮.❤❤

This is a brilliant recipe. I can’t stand “Cakey” cookies either. Have a batch ready now. I have to wonder. Maybe spreading the pumpkin out on a tray and blotting it would be faster? I’ll try that next time.

Just made these. They taste delicious, but I think I didn’t press enough of the water out of them and so they still turned out cakey. I will definitely need more patience next time to get more water out.

If you add baking powder does that make it fluffy at all? I’m wondering if you could make them even chewier by just using baking soda!

Hmm this recipe is designed specifically to not be fluffy. We blot a lot of the moisture out of the pumpkin specifically to avoid the fluffiness. I wouldn't add either baking soda or baking powder to these cookies. The results won't be quite what you are expecting.

@@SugarSpunRun you have baking powder listed in the recipe. That’s why I’m questioning if they’re chewy since baking powder lifts.

Yes these are a chewy cookie. I’m saying you shouldn’t add any more than what is listed. Typically a pumpkin cookie is cakey due to all of the moisture in the pumpkin. The baking powder here will actually help the cookies spread. 😊😊

@@SugarSpunRun so they did end up turning out a little bready but not too much. They're still crunchy on the outside but they're moist on the inside, slightly chewy. They're kind of like a black and white cookie texture. But they do taste absolutely wonderful. I make a difference version of persimmon cookie almost every year and I improve a little each year I make them. They aren't exactly what I was hoping for but it's darn near close enough. They are absolutely delicious. Despite them not coming out exactly how I wanted them, they were still very good. I doubled the receipt and I'll be handing them out for the holiday season to friends and family 🥰

I do like to note that corn syrup is not the same as high fructose corn syrup. But yes you could definitely use a different frosting too😊

I would not recommend it. They are going to spread in the oven so the shapes won’t turn out anyway. You won’t get the proper consistency when it’s done baking. This one just really isn’t meant to be made that way. I’m sorry. 😔

I get my pumpkin from my pumkin from the garden. They have more moisture than canned. I guess I could drain it.

I'm not sure how it would work, but if there's a lot of extra moisture, you will definitely want to get rid of some of that.

I used canned pumpkin, which can look darker than fresh pumpkin. 🙂

Make sure you're not blotting too hard that you actually pull up the pumpkin on your paper towel. You just want to absorb the extra moisture 🙂

@@SugarSpunRun no if I read right it was 3 cups and I spooned it into the measuring cup, not scooped so it wasn't dense..I wish they came out as good as yours but they didnt..but we are eating them anyway. I will def try again but I think I would reduce the sugar for my liking..and use just a little less flour..thanks
