Von Kaiser - the John L. Sullivan caricature quickly became one of my favorites of the three underdogs (With the other two underdogs being Little Mac and Glass Joe).
For a game with a simplistic plot, Von Kaiser has an interesting redemption story arc. After suffering a humiliating defeat by the hands of kids (that he tutored while being their military boxing instructor), Kaiser's ego is dashed into pieces as you can clearly see during the first fight. He is scared to fight Little Mac due to the fear of losing to youngsters all over again. Little Mac makes easy work of Kaiser anyway (he's actually easier to KO than Glass Joe)!
In the opening of Kaiser's Title Defense match, he is angered at the news of Little Mac being the champion. So, Kaiser gets over his emotional distress by giving himself the symbolic hair cut of change, toughens up, and is now ready to kick some juvenile rear end!
The second fight shows Von Kaiser's true fighting spirit as opposed to the first time when he's crying for his mommy, or screaming "HILFE!" He's also the oldest of all the boxers which means that he might be more of an underdog than his younger challenger/champion Little Mac.
I find it odd that I sometimes want Von Kaiser to win more than Lil' Mac.
