Cooking the Eggy Girs
Jerky meat is used for preparation of Eggy Girs which is very popular in İlisu. Jerky meat gives this dish a special taste and satiety. This delicious food is called Eggy Girs because of the large number of eggs used in it’s preparation. Firstly the stuffing is prepared. Jerky meat is boiled in water, well cooked, finely chopped and added to the fried onion in butter. Cherry acid, suna acid, pepper, salt and eggs also are added and well mixed.
The dough out of flour, salt and water is prepared, divided into logs, spread and cut into small circle shape pieces. The edges of the dough cut into circles are folded and a small space from one side is left unfolded for filling with the stuffing. So, the folded circle shape dough is stuffed, closed, cooked for 10 minutes in the boiling water and filtered.
The Eggy Girs is served with barberry juice.
