He use to not be like that. Charisma has given him the confidence to do stuff and has pushed him outside his comfort level at times. It has really made him grow and become way more confident in himself.

@@CactusJack252 Yeah I agree but a quadriplegic handling knifes is not a good idea when he doesn't have full and control. There's nothing wrong with trying something new and expanding your comfort level especially when you're disabled but you still have to be realistic especially when it comes to safety.

a good ideas when measuring sticky liquids like honey and oil. Measure the oil first then use the same cup to measure the honey. This way the honey doesn't stick to the cup and need scraping out.

I'm so so glad I found your videos. Especially the ones where you explained about your muscle spasms. My 2 year old quad grandson with a c6 complete injury started having them a little worse lately in his legs and feet. We didn't freak out thanks to you. Thank you so so much Cole.

Cole and Charisma I like how you are working together to create a meal, everyone brings their own talents to the table. You both are awesome people. There are more accessible options for kitchen tools and equipment, you could put a rubber mat under the bowl when Cole is stirring so Charisma doesn't have to hold it, there is other things like stirring spoons and forks to help hold the meat while Cole is trying to cut it, check it out with an occupational therapist, I know Charisma was going to school for that but maybe check with former professors or the Shepherd Center for ideas on adaptive equipment for the kitchen and check with a ADA architect or kitchen designer to make the kitchen more user-friendly for Cole.

makes me feel like a failure & its just "me" (cervical + lumbar disabled). The presence of a signif other, or roommate is a 1,000,000 times better than being able bodied alone. Solitude kills, I just read an article on it. But how does one generate interactions if he's only able to tolerate 1-2 hrs on his feet (shopping + Dr appts)? I can get essentials leaning on the store cart, but I'd much rather be working/socializing than earning a disability check for confinement on my back in bed nearly all day. All the req'd pills are overwhelming too. So this is your stranger venting today on this post. Netflix is my signif other 🙄. Wish I could trust myself with that chicken, hope it was good!

Rice pointer: add rice when water boils. Lower heat and cover rice. This should be done by the time your other ingredients are.

The smoke could be caused by the type of oil you used. Olive oil has a lower smoke point (375 - 405 F) than other vegetable oil (400-450 F), so that may be the reason for all the smoke. That dish looks super tasty though!

If you're looking for a healthy oil with a higher smoke point then olive oil, I would suggest avocado oil!

@@coleandcharisma that's what the OP meant, olive oil has a lower smoke point, which means it starts smoking at a lower temperature than many other oils. I think the pan was heated too high for the olive oil, which is why it smoked.

I recently broke my wrist and had surgery. I am right handed and broke my right wrist. Watching this reminds me of how I have been adapting to make everything work just like Cole is. Obviously mine challenges are just temporary but I think what you guys are doing for awareness is excellent! From one quad (35yr vet) to another: Cook/prep at a desk height level, less shoulder strain & facial trauma possibilities, more leverage. And I always cook from the side, never roll under a surface with hot spillable anything. Lap burns are a matter of when, not if. :)

Tip I've learned from my chef husband: A damp paper towel under cutting boards (and likely bowls too) will help hold them in place.

When measuring honey put nonstick spray like non flavored pam on the sides of the measuring cup then the honey. The honey then is easier to pour out.

I REALLY admire you both....Charisma for her cheery ,patient ,capable, nurturing character and Cole for his persevering ,disciplined ,creative,spirit. In addition, you are both ,intelligent articulate,ADVENTUROUS and have a VERY impressive level of independence....You work so many things out TOGETHER...without external help. Of course super- caring members of your family ,friends, professionals and circle of well- wishers pitch in to help for. formal procedures AND fun when you deem it urgent or necessary. I may be too late with this suggestion but here goes----If you can find space (maybe a spice rack could help) you can pre-measure some liquids in small amounts and keep them in small bottles/vials or whatever is easy for Cole to manipulate ..Also tins or containers for dry ingredients(.eg..1 cup flour etc) with covers that he could dislodge. HAPPY COOKING ! From Trinidad.

I'm not sure if you've already tried this and it didn't work for you, but in case you haven't; Something that I do that may be helpful for you also, is lay down a damp dish towel under my cutting boards, bowls, etc. It stops the items from sliding on the granite/stone countertops. I find this SOOOO helpful!
