I've got a complete 20 years old set of the classic line from my father three years ago. The Knifes are still sharp and I love them all. I think, twenty years later they will be a nice present to my children.
Solingen is really the mecca of the sharp steel, I came to visit the city and the numerous factories and was blown away by the quality you can find in every of those manufacturer! Just amazing...
I have an old chefs knife that is simply amazing. It holds and edge forever but can be resharpened with just a few strokes with a diamond hone. Thanks, Wusthof family!
Good to know that so much goes into making a simple knife . Thanks for the upload and information sharing . 7 generations and family business , not only shows the hard work but also means that you have not compromised on the quality . Keep it up .
I have purchased two sets of these knives. To say the least they are the last knives you'll ever have in your kitchen. Like anything they will last a lifetime given the proper care. My set has white handles and I haven't seen any other set of knives with white handles.
I make great kitchen knives, but it takes me up to 11 hours per knife before I'm finished. You make make good knives and I have several in my kitchen. Interesting video! It was nice to see actual people working on the knives at the end of the production line.
The knives look great and could be lasting..!! My sister who lives in Germany gave me a Solingen razor as a gift years back and still in use once I a while..!!!
Great video. Question-what happens to the knives which do not meet the standards of wusthof? Do you recycle the steel of the defective knives? Just curious-I owned a Wusthof knife set and love it.
Very nice automatic production line, but basically the "forged" line of wusthof is not actually forged even a little bit, it's just made out of coil, welded ( seriously ?? ) and pressed to create the bolster. Am I wrong ? why even bother to call it forged ? I didn't see the blade recive any forging process
12 jun 2020 6:20 pm edt: maybe those small-family-business have swiss-bank-account which resist complicated german-tax. like bosch-gmbh employ a person who has board-director-seat in www.ubs.com/global/en/our-firm/governance/ubs-group-ag/board-of-directors.html with complicated-german-tax, maybe small-family-business can not survive. 12 jun 2020 7:19 pm edt: board-director-seat means ceo-supervisor-seat. 14 jun 2020 10:11 pm edt: some article : www.epsu.org/article/german-companies-are-among-world-s-leading-tax-avoiders from google (tax haven for german company) result 1
They're full tang clearly but forged? I don't think so. Where are the hammers. The costs they add is ridiculous, using all those robots (the video is from 2014, probably now they've even more robots). That's why I remain with Victorinox which for the 1/3 of the price last forever either and are extremely lightweight
Such an 80's style video. No wonder Japanese knives are passing you by. Hint: ignore the laser engraved BS and drop the robot focus. Solingen steel is legendary; get it to 62+.
@@charlestait5303 :- I agree, and the normal abuse that kitchen knives are subjected to would lead to chipping at that level of hardness. Also at RC 62...who would be able to sharpen them without special sharpeners?
@@blueeyeswhitedragon9839 , whetstone 1000&6000 grit would do a perfect job. in my opinion german knifes beat the japanese knifes in everything except hardness. today people have learned how to look after their knifes and that is why people turn to japanese knifes more. i have some japanese knifes because i like that razor sharpness that can not be achieved on softer still but also i like wusthof because i know in 30 years time they will look just as they look today something you can not say about japanese knifes
"Herr Wusthof, we need to change our entire business model and production model immediately, what you are doing is all wrong" "Wow, what an insight, where did you learn it?" "Some guy on RU-vid comments said so" " . . ."
Funny how some folks will rag on the cheaper 'chinese-made' stuff, which is often either 'hand-made', or else comes from even _more_ 'automated' factories than this one.... though minus the price tag required to support Germany's higher wages and mandatory 6-week vacation. 'Cuz nuthin's ever 'free'.
Hi dominikelis. Thank you for your interest in our products. This is a very good question. It depends on how often you re-sharpen your knives, which sharpener you use, how much pressure you use at sharpening. As you see there are variable topics so that the question cannot be answered precisely. Best regards from Solingen The WÜSTHOF Social Media Team
Dear Yashar, this video only shows snippets of our production process. The whole knife is forged entirely, but unfortunately not shown in this video. Best regards, your WÜSTHOF Team.
Mass produced for max profit with acceptable robotic quality. However, I bought the Gude die Messer handmade knives from Solingen as well .. these are far more aesthetic with better finishes like their Olive wood handles .. they look a million dollars and sheer cutting quality and will last a lifetime .. hand forged means you can keep sharpening these babies for decades when needed. Check out their video on youtube too. They make only limited quantities as they are 100 percent handmade throughout their 40 step process.
many Swiss knives are made with robots yet they are good quality at affordable price. This is the reason China is slowly winning because they employ state of the art robots in manufacturing. Most of the poor quality we associate with Chinese goods is due to human errors and low quality materials when China had lots of dirt cheap labor. That is no longer true in China. Sure, some humans become excellent craftsmen but they also charge a price that makes their knives out of reach for many people. I am glad the Germans automate all the steps that can be automated with quality control done by humans to ensure excellent products.

So-called hand craftsmen all wish they had equipment like this, with such tight production control of multiple knife parts. But there is some pride and feeling of high accomplishment by the person who produces a purely hand made knife, hammered and tempered and heat treated by hand and eye. But such craftsmanship requires much time and the higher price shows it.
@@Daledavispratt I'm well acquainted with both. Greater automation invariably results in the better product. As soon as you introduce a craftsman, you get good and bad moods, Friday afternoon specials - all the kind of stuff you really don't want. I supply instruments to ESA and NASA for space flight. They will simply NOT accept anything hand-wired. Don't even bother suggesting. They want stuff off a production line that is demonstrating better than 99.9% yield.
