This is a quick and easy cake recipe without butter! It uses buttermilk and oil to add both fat and flavor to the cake which results in a slightly tangy and moist cake. It is then topped with a simply powdered sugar glaze that will remind you of donuts! Add some sprinkles if you like for some fun!

Recipe Tips & Tricks:
✔ If using a darker pan, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.
✔ Any flavoring can be used in place of the vanilla.
✔ If using regular milk, you will need to use baking powder. You will need 2 1/2 tsp (10g) of baking powder.
✔ Although it’s not recommended, this is how you make a buttermilk substitute: Add 1 tbs of vinegar or lemon juice into to a measuring cup. Pour milk in up to the one cup mark. Let sit 5 -10 minutes. Video • Buttermilk Substitute ...
✔ Bake 40-55 minutes or until center reads between 200°-210°F (93°-99°C.)
✔ The toothpick method only tells you a cake is done, but it doesn’t tell you it’s overly done. Over-baking will lead to a dry cake.

This is my kind of cake. I'll print out the written version and keep it handy in the kitchen cabinet. We may put on a few more pounds with this easy dessert. Thanks for sharing another great video. Did Raymond get a taste this time?

There’s a chocolate version of this recipe. 😁 Add 1/2 cup of cocoa powder to the dry ingredients and reduce the flour to 2 cups. Then for the glaze, you add a couple tbs or so of cocoa to the powdered sugar. Raymond did get a bite of the cake slice in the video. I don’t like this cake as it is too sweet for my liking. The dogs loved their little sample. My husband ate the rest of the cake. His students love this and the chocolate cake recipe.

This cake looks so light and fluffy... can I use yoghurt mixed with milk to make buttermilk? Its not easy to find it in the UK. I have used buttermilk in the past but resulted in a dense cake would you know why this is? ❤❤❤❤❤❤❤❤

Yes, yoghurt mixed with a little milk would be a perfect substitute. You want to thin it enough to have the consistency of whipping cream prior to being whipped. I would start out with a generous cup of yoghurt and add then add milk gradually until you get 360mL of a consistency similar to cream. A lot of buttermilk cakes can be quite dense because of the type of leavening, other types of fat used and other ingredients that are known for putting moisture into the batter. Some are supposed to be dense like banana cakes can be. Let’s go over a few: A cake made with butter and buttermilk will usually be quite dense because the fat just coats and weighs down the flour quite a bit. It makes the crumb become closed textured and heavy. Another is the leavening. When using baking soda, you really have to get it in the oven promptly or it will lead to a dense and somewhat soggy texture. That’s because the bicarb soda (baking soda) and buttermilk react immediately. It will run out of steam and deflate if you don’t put it in the oven immediately. Kind of like those school volcanoes we made with bicarb soda and vinegar. You want the reaction to happen in the oven so the cake can set before it reaches its full potential. Make sure your oven is heated and ready to go before you start the cake. You can also prevent this by halving the bicarb to 1/2 tsp (3g) and adding a 1 1/2 tsp of baking powder (6g) to the mix. Added ingredients like applesauce or squash can weigh down the cake due these ingredients putting too much moisture into the flour. If the ratios aren’t just right, there’s no more room for the buttermilk and other fats and it just makes the cakes very dense and almost gummy tasting. It’s a bit of a challenge to get it just right. Hope that helps! 😊

You’re welcome. I’m glad to pass on what I’ve learned to help you not make the same mistakes I have! 🤣 This cake will remind you of a box cake mix in texture. I love it because you can use cold ingredients and it only takes a little longer to bake. It’s a really fast recipe to get in the oven as well. I just sent this style of cake to my husband’s work and added in a variety of spices (cinnamon, cardamom, cayenne, black pepper, ginger and allspice) it was a huge hit.

That was such a wonderful looking cake. I'll have to make himself one soon. Vanilla is his favorite flavor. On the rare occasion we get ice cream, I'll get something moose tracks look over at him and he's getting vanilla. We are so different, its a wonder we've been together nearly 50 years. 😆

Since he’s a vanilla fiend, double up on the vanilla extract. It will really punch through that way. The cake was recently referred to as a sugar cookie in cake form. 😆

@@Jacksonsjob oooooo 😯 COOKIE CAKE! Okay, I can't believe I said that out loud and in cookie monster's voice. 🤣🤣🤣🤣🤣 He is predictable. If there is a buffet, and it has desserts with pineapple, apple, coconut or vanilla, vanilla is always the 50/50 bet. Those are the 4 flavors he will want. If asks for anything, it will be one of those 4 flavors.

It really depends on the recipe and what function the sugar is providing. Since there are only two eggs, sugar provides structure and support in addition to browning and sweetness. I have cakes that are the same size with nearly half this sugar amount. This one will give you sugar jitters if you eat too much 🍰😬😆

@@Jacksonsjob Too bad I didn’t have this recipe four days ago on Monday. I definitely needed an extra dose of energy to make the 200 mile trip to my country place where I finally laid Domo to rest. The river levels are 15 feet above normal so basically everything is flooded. To bring him to the island where I wanted to bury him was made impossible to reach by car. The roads were washed out and certain areas were completely underwater. I had to bring a zodiac inflatable to make the last final mile and a half where on a couple of occasions I had to take everything apart and carry across the land to get to the next point of water and finally to the final destination. I really needed to bring closure to Domo and offer him the last dignity possible. To give you an idea of how difficult it was to get there. To make the mile and a half trip took me 8 1/2 hours round-trip.

@@Jacksonsjob Typically i would avoid testing the flood waters of the Barry River which flow into the Ottawa River like the plague. In the early years of the 1920's, my great Uncle and a couple of very prominent politicians drowned while on a fishing day trip a few miles from where i had to enter the flood waters. My great uncle, being a military officer got his trousers caught up in a fish hook and the fishing rod got tangled in the turbulent waters when their row boat capsized. The event made all the newspapers in our capital due to the significance of the men who drowned. The one survivor, who couldn't swim actually made it to shore having survived the rapids and alerted a local farm. Local farmers and the police initiated search parties in the hope of finding survivors. People still talk about it today! So, i have a very profound and fear of that river. That section is the Ottawa river is the roughest real estate in the near 800 miles of its journey to the Atlantic. Curiously enough my Grandmother kept detailed journals of the day to day operations of the Ranch, the employees, the saw mill, how many eggs were laid and especially the weather! I read through her journal for that year and was keen to note the snow melt, the rain and the rising water levels over the weeks prior to the accident. It was the making of a "Perfect Storm" that culminated on that days events. As i was reading, i couldn't help but try to send out a warning in my thoughts having seen the events unfold in front of my eyes. My Grandmother was so devastated by the loss of her cherished brother in law, that she stopped her journaling after that day. The farm where i left my truck, our families have been friends for over 120 years. His father had taken part in the search party when he was a young man. His son, who is now in his 60's, was so worried that it was past 4 pm and there was no sign of my return. That he almost called the police to go looking for me! It was 4.45 pm when i got back. I think i will now call the path we took through the raging river and swollen swamps, the "Mia Kulpa Tail". Not a type "O", i had Domo to keep me company!

Haha. Miss Emma’s Delight is a perfect name! I figured you might appreciate the recipe. It’s too sweet for me at 2 cups, I like the 1 1/2 cups but everyone else loved the 2 cups of sugar. 😂 Raymond says hello! 🐕🐾 These mitts make me feel like im wearing flippers. But at least I won’t hopefully won’t sear my fingers again. 🤞🏻😬
