Looks great but some thin long zucchini would be good between the chicken and the sauce. If you brine the chicken with one Tbsp salt and sugar, water to cover the chicken. Let it sit for a couple hours. Fork tender 🎉
I only cook for two as well, but I divide a larger recipe in half and have some for lunch the next day. Or I take some to our elderly neighbors. I don't expect every recipe to be catered for every viewer. That's impossible! Just keep doing great things. We are grown-ups, and we can figure it out. Great job!
I usually use both fresh garlic and dried garlic in dishes, because they taste different enough to add more and complexity. A higher note from the raw and a deeper note from the dry.

The Spaghetti doesn't fit, so you stand them around the side of the pot in the boiling water. Push them down as they soften. They are submerged in a matter of seconds. Use a wooden spoon to slowly press them down. Its not difficult.
If you want to make your marinade soak into the chicken better, poke the chicken all over with a fork before putting it into the marinade. These dishes sound very yummy. I made sheet pan Yukon Gold potatoes for dinner last night. They were good.....but, I didn't have your marinade. Will give it a try. Thanks for the inspiration.
Hi Jessica, Love watching you and Bunkie cook! But, you must stop breaking the spaghetti and fettuccine in half...it's very unitalian...lol😅😂 Try to get the Rachael Ray Oval Frying and sauté Pan. Jessica, if you want a really crispy potato, put your potatoes in a pot of water and add about a tablespoon of baking soda and bring to a boil for about 3-4 minutes. Drain and oat dry. Then proceed with your recipe and cook potatoes in oven. You will get that crunchiness ten fold while the inside is soft and creamy. ❤ by the way, I’m making the chicken dinner tomorrow night. I just made the marinade and I’ll put it on my chicken tomorrow morning. That marinade is off the chart amazing!! I’m excited to try this tomorrow!!

Hey Ijust love you guys just a little tip when I break the pasta I do the whole box closed you put it on the edge of your counter hanging off the side and gently but forcefully bend the box youll hear it cracking gentle force so you dont bust the box when you have cracked it just open the box take what you need....it sounds hard,weird etc but Ive been doing this for EVER lol at least 40 years ....try it...God Bless you BOTH Julianna Raleigh, NC

When I need to mince more than one garlic clove, I put the peeled cloves on a piece of parchment paper. I fold the parchment over the cloves. Place it on my cutting board and bang it with the flat side of.y meat mallet. This also comes in handy when I want to make garlic paste. 😊
When I forget to cook my potatoes or fries ahead or earlier I will put them in the microwave just a little to get them cooked inside. Then finish by seasoning them then frying or oven crisping them

I love casseroles. Growing up we had them a lot. Recently we had dinner at Local Roots in downtown Lincolnton and they had a broccoli casserole and a squash casserole on the menu as side dishes and so so yummy, just like I remember casseroles, the ones with the buttery ritz crackers drenched in melted butter and baked golden brown on top 🤤😋
Tip for breaking the pasta without making a mess. Take the whole box and place the center of it on the edge of your counter and break the whole box in half. It breaks the noodles in half perfectly.
I'm sorry if this is personal and you don't have to answer. I know you said you lost 15 lbs recently in the past month and was wondering if you are on any meds like Ozempic or the similar ones. I am gonna try what you're trying as far as how you eat and what you cut out but I don't want to be unrealistic if you lost some of your weight that way.
I haven’t taken or done anything to lose the weight except for the good ole old fashioned way! I still have a Reece’s cup after dinner every night and less healthy meals here and there but I just truly have made more conscious choices! I wouldn’t be able to maintain it if I was super restricted!❤️
