In this video, I show how I trim a brisket for bbq. Beef brisket comes from the store in several forms, but most barbecue cooks prefer what is called a packer trimmed brisket. Whether you're smoking in an offset smoker or a weber smokey mountain for a competition brisket, grilling on a pellet grill or just baking in the oven, it's a good thing to know how to trim the excess fat off these big cuts of meat.
