Quick & Easy Aloo Matar Paneer Recipe in Pressure Cooker

Ingredients:
200g Paneer, cubed
1/2 cup Green Peas (Matar)
1 medium Potato, peeled and diced
1 tsp Salt
2 tsp Sugar
2 tsp Soya Sauce
1/2 tsp Cumin Powder
1 tsp Coriander Powder
1.5 tsp Red Chilli Powder
1/2 tsp Turmeric Powder
2-4 tsp Oil
Whole Garam Masala (2 Cloves, 2 Cardamom pods, 1 small Cinnamon stick)
1 Bay Leaf
1 tsp Cumin Seeds
1/2 tsp Asafoetida (Hing)
1 tsp Ghee
1/2 tsp minced Ginger
2 medium Tomatoes, finely chopped
Fresh Coriander Leaves, chopped
1/2 tsp Kasuri Methi (Dried Fenugreek Leaves)
1.5 cups Water
Instructions:
Heat oil and ghee in the pressure cooker over medium heat.
Add whole garam masala (cloves, cardamom, cinnamon), bay leaf, cumin seeds, and asafoetida. Sauté for a minute until fragrant.
Add minced ginger and sauté for another minute.
Add chopped tomatoes and cook until they turn mushy and oil separates.
Add salt, sugar, soya sauce, cumin powder, coriander powder, red chilli powder, and turmeric powder. Mix well and cook for 2-3 minutes.
Add diced potatoes, green peas, and paneer cubes to the masala mixture. Stir to coat the vegetables and paneer with the spices.
Pour in water and mix everything well.
Close the pressure cooker lid and cook on medium heat for 2 whistles.
Once the pressure releases naturally, open the lid carefully.
Check the consistency of the gravy. If it's too thick, add more water and adjust the seasoning if needed.
Crush kasuri methi between your palms and sprinkle it over the curry. Stir gently.
Garnish with freshly chopped coriander leaves.
Serve hot with naan, roti, or rice.
