Here’s a recipe for Non-Fried Bread Paneer Pakoras that’s healthy, quick, and packed with protein:
RECIPE:
Ingredients:
Paneer (Cottage Cheese): 150g, cut into slices
Whole Wheat Bread: 4 slices (you can use multigrain bread for added fiber)
Gram Flour (Besan): 1 cup
Water: 1cup (or as needed for batter consistency)
Turmeric Powder: ¼ tsp
Red Chili Powder: ½ tsp
Garam Masala: ½ tsp
Cumin Powder: ¼ tsp

Ajwain (Carom Seeds): ¼ tsp (helps with digestion)
Asafoetida a pinch (optional)
Salt: to taste
Chopped Coriander Leaves: 2 tbsp
Grated ginger
Finely chopped green chilii
Ghee/ Oil Spray or a brush for coating
Grated vegetables of your choice
(1/2 cup each of onion, pumpkin, carrot, capsicum, beans) can adjust quantity
Instructions:
1. Prepare the Batter:
In a mixing bowl, add gram flour (besan), spices: turmeric, red chili powder, garam masala, cumin powder, and ajwain.
Add water gradually and whisk until you get a smooth, thick batter. The consistency should be similar to pancake batter.
Add salt to taste, chopped coriander, and Grated vegetables.
2. Prepare the Bread and Paneer:
Place a paneer between two small pieces of bread to make mini sandwiches.
3. Dip and Coat with batter
Heat a non-stick pan or griddle on medium heat and lightly grease it with oil spray or a light brushing of ghee.
Dip each bread-paneer sandwich into the batter, ensuring it’s evenly coated on all sides.
Place the coated sandwiches onto the hot pan.
4. Cooking:
Cook on low-medium heat, turning occasionally, until golden brown on all sides.
You can spray a little more oil as needed, but avoid using too much to keep the pakoras healthy.
Cut the bread slices into quarters or small squares or triangles
Can airfry these pakodas further for more crisp
5. Serving:
Serve the non-fried bread paneer pakoras hot with green chutney or tomato ketchup. They pair well with a cup of chai or as a side snack.
Paneer pakaudas:
Dip slice or cubes of paneer in batter and grill it on griddle spraying some oil on it on a non stick pan
Pro Tips:
Air Fryer Option: You can also air fry these at 180°C (350°F) for about 10-12 minutes, turning halfway for even crisping.
Add Veggies: You can sneak in some grated carrots or finely chopped spinach into the batter for extra nutrition.
