Check out this cheap mod after seven years and watch is smoke a turkey! • Quick Video on Helpful...
There are a lot of long Brinkman smoker or just plain mod videos. This one is short. Mod your style of smoker with similar part or measurements that apply to your unit. Be safe, drink beer, and smoke some meat.
Here are instructions that might help:
Tools:
1) Drill with a big bit (at least 1/2")
2) Screwdriver
3) Beer
Get at the store:
1) Get 3 square bricks that are about 3" high.
2) You need a bendable steel mesh/gate material 14" x 14".
a. Plan to cut that grate with something sharp at home.
3) A granite-ware pot. ~12" dia and about 10" deep.
4) A gilling temperature guage with threads and a bolt on back.
5) Lump coal.
a. This stuff is real nice and leaves less ash.
6) Foil. You cannot do wrong with foil and bbq.
a. Do not forget the beer. This is important.
Do this at home:
1) Move the smoker legs to the outside.
2) Drill lots of holes in fuel holder.
a. Mostly in bottom to allow easy passage.
3) Cut grate to set 1-1/2" above the bottom of fuel holder.
4) Take a drink of beer.
5) Foil up water container.
6) Position the bricks under smokers legs.
7) Put back together and stand back impressed with yourself!
a. Enjoy another beer.

I like the leg flip. Adds to the stability! Great idea on the holes in the bottom for the air. Keep those coals hot!

I love your warning of Don't be stupid. You know someone out there has made a mod and used their bare hands to move the coals while covering their head with a plastic bag and head stuck in a bucket of water. At least you won't get sued.

I reversed the legs on mine a few years ago, it is nice to be able to lift it on and off the coals. makes dumping a chimney of lit coals into the bowl easier too

Thanks for making this video. I just purchased a good used one for $20. I've heard about the various mods but never saw them used. I like your ideas and I'll be copying most of them over time.

+terrabus1 You lucked out, I think. I just picked one up at the local flea market, also $20 and went looking to compare with new prices - but there are no new prices. Apparently, Brinkmann has bailed on the water smokers and they are no more. You might find one still on eBay, but that looks like it's about the end of the Brinkmann bullet smokers, both the Smoke'N Grill and the Deluxe Charcoal. Sad.

I have the Char-Broil H2O Smoker which is similar to this, these mods are genius!! I'm going to do it. I was ready to throw this smoker out , but after seeing this I think I'll keep it now!!

Genius was the word I was going to use for this vid. Covering the coals with some tin can regulate the burn rate as well. Like a cold smoker idea. you can also put holes in the tin and eventually it will burn slow as one wants.

Well, I don't normally reply to comments, but thanks for letting me know! I hope it helps you out, I still use it YEARS later :) Stay safe and I'm glad my old video is still relevant and helping people eat well through a pandemic. There's a debate if I used galvanized steel with the grate to raise the charcoal. To be honest, I'm not sure. I had throw the piece out early on so I could better cut and fit a stronger grate (not galvanized).

@Paul There are newer digital thermostats you can pick up that directly go in the meat you might want to look at as well. Keeping a consistent temperature is a key to success. I may have said a temp that was a little too low in the video, but definitely check around the internet for a good average temps based on whatever you plan to smoke. Best of luck!

abdoanmes: thanks I think, since I need a thermometer I will get the electronic one that goes in the meat, it sounds like it would be more accurate. I live in Bay City Michigan, every summer we have the pig gig , it,s an event that hosts barbeque experts from all over the world, who join in a prize winning competition. I,m sure I,ll pick up some pointers if I ask, (plus some really good ribs) Have a great day.

Paul Sadlak - Someone just Gave Up on their smoker, which is exactly like yours. So I took it and am refurbishing it. Just needs to be cleaned up and repainted. I checked out this video to learn how to use it. I’ve got some great Southern recipes I’d like to try 😝

How do you keep a "consistent temperature" when you drill holes in your charcoal pan with no way to shut down the airflow to the fire? I'm going to install another vent on the bottom so I can open and close it to have better control.

John doe Good question! I have worked to place my lump coal in a spiral pattern so that it doesn't all light at once. I've practiced a few times and have written down how much coal can last for certain meats. It is a pain in the ass, but once you get to know the quirks you develop an intuition for it. If I'm doing a pork butt, I've had to refuel multiple times with... Overall, this mod is for beginners to get a bit more control. I would suggest getting a pellet fed smoker like a Traeger or something to better contol temp. My buddy got one and it has worked really well. Only downside is that you have to clean components a lot more to ensure it works consistently.

Alternatively, I've heard some people use a fan to increase airflow. Turning the fan to different settings can help control airflow. I'm a beginner, but I used this method on my bullet smoker. I'm still learning if it was actually successful or not.

Always had a problem getting mine to burn consistently..I put the legs on the outside and use my Weber smokey Joe..Just light the Weber..put the Brinkman right over top of it..perfect fit..

CHRISTIAN BIRD I have tried hi temp adhesive rope, but it does wear down. There's a product called Fireblack Hi temp BBQ adhesive that I am going to try. I might have to do a follow up to this video if it works!

Thanks for this video. I know a lot of people add vents to the top and wrap the lid rim with fire rope to keep a consistent temp. Does yours hold steady without such mods?

It does very well. I have tried the rope method as well with high temp glue. it does help with a more consistent temp but can fall off if not glued well.

To everyone asking how you regulate the fire without airflow, It's more of a matter of controlling the heat by regulating the amount of coal on the fire. It's lazy to add a ton of coals and then choke the fire by restricting airflow. You want full, hot burning coals to keep the fire burning clean.

hey I just got this from my parents and the first thing I noticed was how am I suppose to control the temp. not sure if I saw if you put a control damper on this. otherwise this is exactly what im going to do to mine.

Killin! I'm new to smoking and most vids deal with offset/pellet/electric smokers and I'm not ready to make that investment and yet the cheap bullet smoker I'm using isn't very good. Your mods (which I'm gonna do this weekend) are likely gonna solve a bunch of problems I have with mine. Thanks a ton.

I did this today and instantly got 20 degrees hotter at the beginning of the cook. I had some struggles later on so I'm gonna go back and drill more holes (I didn't do as many as you, initially) so I get better ash "drain." My pot is a piece of HVAC ducting that bought for next to nothing at a junk shop.

@@twicecactusman Here is the heating schedule I normally use: FUEL TIMING HOUR 0 - setup smoker with 15-20 lump coals and 3-6 wood chunks - run for 30 - 40 min to heat to consistent ~200°f HOUR 0.5 - add a 5-10 lump coals and 2-3 wood chunks HOUR 1.5 - add a 5-10 lump coals and 2-3 wood chunks - stir coals and wood for better air flow HOUR 2.5 - add a 3-4 lump coals and 1 wood chunk HOUR 3 - use leather gloves and clean out soot - add 15-20 lump coals and 3-6 wood chunks - bring heat back to ~200°f before proceeding HOUR 4 - add a 5-10 lump coals and 2-3 wood chunks - stir coals and wood for better air flow HOUR 5 - add a 5-10 lump coals and 2-3 wood chunks - bring heat back to ~200°f before proceeding HOUR 5.5 - add a 3-4 lump coals and 1 wood chunk - no more fuel added from here

That is amazing info. Thank you! While I've got you, most materials I've viewed/read say to do the 3-2-1 for ribs aiming for 225-235°F. Are you saying 200°F because that's all our smoker can get up to or do you prefer 200°F? I was at 220 at one point but couldn't maintain it. If 200°F, do you still do 3-2-1 or longer on one/more of those stages? My cook from yesterday was fine but I'm still not getting the tenderness or falliing off the bone that I want, etc.

@@twicecactusman It will be based on a few factors. I kept saying ~200° as a minimum. The biggest trick for me is consistency on the heat and not taking off the lid unless I'm am working on the meat. A bit of my recipe is to remove the film off the bone side and brine the ribs for no less than 30 minutes before smoking. I usually brine about an hour or so. Water, salt normally. Then I dry rub the meat. All the while the coals are warming up. I actually run it for an hour with no meat. And refill with fuel before I start. I want to make sure I have everything going well. I put on the meat, bone down for 3 hours. I would say I can keep it 205-215 pretty consistently. Each half hour, I turn the coals, add a bit more, or throw in a piece of wood to get the temp up quick if I'm losing it. On hour 3 take out the ribs and foil them. I normally put in a couple heaping spoonfuls of butter and garlic salt. Enough that it simmers in it. I place the foiled ribs, meat side down for another 2 hours. In between each fuel changes, I am constantly tending the coals and removing ash to keep consistent temp. After the two hours, I poke the foil and drain the butter and throw it away. I remove the foil and toss the ribs on rack bone down for the final sprint. I lather on my favorite BBQ sauce and sprinkle a bit of brown sugar and then put lid back on. This last hour sets the meat. I notice the bones show along the edges about half an inch. That lets me know it's ready! The meat comes off the bone very easily. I have tuned mine so its not mushy, but just about right. It's a lot of time and a good excuse to jack around in the backyard drinking beer all day. I suggest doing other things like lawncare, auto work, or something in close proximity. It helps the time fly and keeps your grubby mitts from peeking at the meat and ruining your timing. Good luck and cheers!!

I use bricks to adjust the fuel to the right level and so I don't lose heat, but it takes a few times to tune it in.

You can open the front door to help control the oxygen, but honestly you will have more trouble keeping it hot enough!

I reversed my legs set the coal bowl on bricks. Added a stainless steel 12" deep fry basket in the coal bowl (raised). Gets good air. The original design of this smoker was poorly thought out. 55$ a 10$ basket it works excellent. BTW I did not drill holes in my bowl.

The built in thermometer is probably just as accurate as any other $5 thermometer, we just don't know what temp it is. Could you look at both and tell us where 200, 250, 350 is on the built in? Anyone else know?

You used a galvanized mesh screen in the charcoal bowl, NEVER use anything galvanized in a cooker because when hot it emits a toxic gas. This is very harmful.

dude, the zinc burns off quickly in an oxygenated fire. Just get a fire going and throw the mesh over it til it's burnt off, perfectly safe.

The original smoker had a larger diameter lid that fit over the outside of the body and it did a much better job than the new ones. Be sure to use wide heavy duty foil so you have a solid water pan liner without overlaps that leak.

You drilled holes in the bottom of charcoal pan then put it on a pot essentially cutting off the air anyway, you need to make some holes in the pot or better yet install a damper in order to “control” air flow.

The holes in the bottom aren't for air. the ones on the side are. The pan is only to catch ashes falling through the bottom holes.

the coals still get plenty of oxygen because they're suspended on the mesh. That's the whole reason for the mesh not touching the bottom. This is a perfectly reasoned mod.

Normal Guy I did it exactly like this. Drilled holes and all. The only thing I didn't do was the thermometer. I also added handles to grates. Works like a charm. It can be tough to control the temp...but you can get access easily to the fire to add new coal and wood chips. I use this for smoke only. I don't cook by smoking. I have to finish my meat on another grill or in the oven. You honestly can't tell because there is so much smoke.

That’s wire mesh , hardware cloth , is coated with zinc probably the most poisonous metal to man
