The Golden Roast: A Flavorful Orloff Revival

Legend has it that Orlov roast was invented in the 19th century in honor of Prince Orlov, who was Tsar Nicholas I's representative in Paris. To cut a long story short, Orlov roast was originally made with veal, not pork, and the modern version of this traditional recipe simply consists of slices of meat and cheese interspersed throughout a roast, before baking in the oven.
Pork roast is inexpensive but a little dry when baked the traditional way so I found this recipe to give my roast more flavor and chewiness.
Ingredients:
A 750-gram pork roast
Slices of Emmental cheese
Slices of pancetta
A bouquet garni
A clove of garlic
1/2 glass water
Oil, salt and pepper
For the accompaniment: 250g 'duxelles de champignons', 2 diced potatoes and 1/2 onion slices
The 'duxelles de champignons' is made before the orloff roast (see video).
