Ingredients (this can make three ramekins):
4 tbsp granulated sugar
10 egg yolks
1 can of condensed milk
1 can of evaporated milk
1 tsp vanilla extract
A pinch of salt (about 1/2 tsp)
Procedure:
1. Gently mix your egg yolks in a bowl. Add in your condensed milk, evaporated milk, vanilla extract and salt then gently stir. Stirring slowly will help avoid air bubbles.
2. To make sure the mixture is smooth and silky, let it go through a strainer in a separate bowl.
3. Preparing the ramekin! In a saucepan, melt about 4 tbsp of granulated sugar. Make sure to spread it out evenly and let it melt over low heat (do not stir).
4. Once everything is melted, pour a thin layer into the ramekin and let it cool down. It’s okay if it starts to get hard.
5. Once the ramekins are ready pour your mixture (again through a strainer) and cover it with foil. Steam it under low heat for 60 to 80 minutes (it will depend on the size). You can check if it’s ready by poking it with a toothpick and checking if it will come out clean.
6. Let it cool to room temperature and put it in the fridge for at least 30 minutes. Enjoy!
