QUICK AND EASY RHUBARB DESSERT
4 cups ( or more ) sliced rhubarb
1/2 to 1 cup sugar
1 pkg. ( 3-oz. ) raspberry gelatin
1 box white or yellow cake mix
1 cup water
1/3 cup melted butter or margarine
Arrange rhubarb evenly in the bottom of a
13 x 9 inch pan.
Sprinkle with sugar; then gelatin and finally with the cake mix. Drizzle water over all.
Spoon the melted butter over the top.
Bake at 350° for 1 hour.
Serve warm with ice cream or whipped cream.
Makes 12 servings.

Note - If you can't find fresh rhubarb, see if your store has frozen rhubarb in the frozen fruit section. I have used the frozen and it turns out just as good. You just may need 2 bags depending on the size.
Another note - I once substituted strawberry gelatin for the raspberry and the dessert just didn't seem quite as good.
