That guy with the moustache had cleverly setup all the main attacking weapons for his own son and left the Bahubali with nothing. That's why when Bahubali signals the first time to throw that boulder to measure the distance that old moustache dude was smiling. That giant cloth and torching is shown to show Bahubali's intelligence that even if he doesn't get the weapons he still knows the battlefield better. That old guy takes it as an opportunity to show his own son as the more capable contender for the throne of the king whereas Bahubali just cares about protection of his people. Both brothers can fight yet it's Bahubali she chooses in the end bcoz he protected his people whereas the other guy just went savage on the enemies not caring if his own people got killed in the process.
Actually game of thrones should have copied from bahubali ( regarding your doubt on war sequence) because Bahubali came a long before GoT "Battle of Bastard" episode
The rounding up scene is generally inspired by the way Roman empire used to fight. Bahubali took inspiration from Indian wars as well as round the world's.

They are following a strategy , thirisoola vyugam , meaning trident formation strategy , the v blockade in the middle is the middle spear of the three Spears in a Trident. The two prince leading both of their armies opposite to each other around the villains army to form a Trident , you can see the trident forming slowly in the aerial shots .
Actually u didn't see it pretty clearly the boulder were heavy so the had a slope to boost speed n actually the kalakeyan I.e the enemy throws the soldiers one by one but as it takes long time it is fast but if u see it in tamil or other languages u can see it clearly n thank you for your comment

All that is being shown about in this scene is a mixture of the warship skills and strengths of our ancestors and VISUALS . For ex Chhattapati Sambhaji Maharaj , the second monarch of Hindavi Empire was such a person. The weight of his protective armour only was around 28-30 kgs . Each of his two swords weighed 35 kgs .
