Actually, he was using Gracie Jiujitsu, which had strikes for certain scenarios in a fight. That knee is still part of the curriculum.

Knees, elbows and oblique kicks, up kicks hatchet kicks, punch block etc. its all in the curriculum

You still learn strikes in Gracie Jiujitsu and a few other schools that integrate strikes. Jiujitsu was meant to be a complete art.

Most of the schools that teach really sport jujitsu are the ones that eliminated strikes but we'll rounded self defense jujitsu still teaches basic strikes and kicks esp in self defense /MMA scenarios ..
