Summer rolls:

🌱 Vegan "Fish" Sauce Dipping sauce:
2/3 c. vegan fish sauce (amzn.to/3wMcPlD)
1/2 c. water
1/3 c. lime juice
1/4 c. maple syrup
1-2 small chilis (seeds removed) - these are very spicy! Please take caution with your hands while removing the seeds. Some people may require gloves.
🌱 Peanut Dipping Sauce
4 TBL PB2 powder (amzn.to/3hxjrhu) or use regular 1-ingredient peanut butter
1 TBL low sodium soy sauce
1 TBL rice vinegar
1 TBL maple syrup
1-3 TBL lemongrass tea (amzn.to/3yrzDYp) or water to thin. Start with a smaller amount, you can always add more.

🍉 Watermelon tuna:
Approx. 3 cups watermelon, cubed, with rind removed
1/4 cup Tamari (or soy sauce)
1 TBL sesame oil (you could probably sub with sesame seeds to make this oil free!)
1/2 tsp. rice vinegar
2-3 TBL nori flakes (or use 1/2 blitzed nori sheet)
Add everything into a shallow glass tupperware and allow the watermelon to marinate for 2-3 hours. Bake at 350F for 1 - 1 1/2 hours, turning every 30 minutes (my larger pieces took 1 1/2 hours).
