I’m guessing either the writers got sick of the “soft-light hologram” rule, or maybe the special effects were getting cost prohibitive. Either way, at least they found a solution with wacky potential.

Can't beleie i'm answerin a serious question about red dwarf but here goes. It's because he has learnt to break his programing. See the episode where Lister teaches him to lie? Tells him to call a banana an apple? He gradually breaks his programing and so can smack Rimmer one when occasion calls.
