The cake looks fantastic! Great tip on the making the cream cheese frosting so that it's pipeable right away: I always find it's one of the biggest pains with using piping bags to get the mix to the right consistency quickly. It's often seems to be either too stiff or too soft. So it's great to have this tip for cream cheese frosting. It's amazing how little of the red food colouring you needed for both the cake mix and the ganache. When I made your red velvet Oreos (which I highly recommend to everyone by the way - they're delicious!), I had to use almost a whole tube of colouring to get them to be a vibrant red. It was a gel food colouring, but I guess maybe all gel colourings are not the same?
Thank you Simon! It's an awesome trick! Just remember to mix fast or the butter will harden when it touches the cream cheese. Probably not. If you want when I get home I can give you the name of brand I use. I wonder if you can find it there. It doesn't cost that much at all. I pay 3 euros for one tube but it lasts forever :) And thank you again!😍💕

This is literally the best red velvet cake recipe I've come across. I've tried so many recipes for red velvet cake and they've all failed. I made it as a birthday cake for my lil sis and it absolutely made her day!
🌸 Tip put crumb layer first with frosting then refrigerate 💕 Once set finish the decorating with frosting, you will find it will be super easy to get neat finish without crumbs 👍🏼 Turn table makes it easy also 🤗

Made the cake, smells amazing but ended up pouring the entire chocolate mixture on top and it pretty much covered the entire cake hahaha, mine definitely doesn't look like yours but I'm sure it tastes amazing, going to use the leftover frosting to pipe out some flowers to make it look half decent, I tell you, you make it look so darn easy while frosting, I totally suck at it hahaha, anyway, thank you for sharing your wonderful recipe, i will for sure tag you once i decorate it and will post on IG, you rock girl💗💗💗
I made your cream cheese frosting! Your method is SO GOOD! Uses much less (1/4 to 1/2) sugar than other recipes so I can still taste the cheese instead of sickly sweet sugar taste! Even in hot and humid weather in Singapore it remained stiff and ready to be piped/frosted. I used vanilla paste and added a pinch of salt to the mixture. I also added some lemon juice at the end to give it some tartness but might swap that for yoghurt next time. Thank you Emma for this brilliant recipe and technique!

I baked this cake and it was the highlight of the night... it was light and tasty... just a simple question, I searched online about the cream cheese frosting and found that there are some recipes that they are whipping the heavy cream before combining it with the butter. my question is, will there be a difference in the taste if the heavy cream is whipped or not ? thank you in advance... loved your recipe Emma, even my mum and sister who always complain about desserts being so sweet, they loved it

Oh this looks so amazing❗I always make my kids Valentines sugar cookies or cupcakes. I had a plan now I'm changing it & making this. I think they will love this. Love the red dripping down the sides. The buttermilk trick is so helpful too, I've done that any times. It's better than wasting leftover buttermilk I won't use if I bought it. Kam M77 Hi, How many ounces of cream cheese did u use. The recipe calls for 21 ounces. Did u use the same amount ? How much of the frosting r u left with by the end?
I like how you pat your cake at 3:09 haha I do that. I made a three layer red velvet cake, with cream cheese frosting today. I'm happy with it for a start, but my frosting wasn't anywhere near as nice as yours. It tasted nice though... Lovely in fact. Hi Emma, just wanted to tell ya I made your yummy 😋 red velvet cake for my family for Valentine's Day. Everyone loved it, delicious❗ Weird thing though my batter was curdled looking until I put my flour part in. I've never had that happen on cake batter. It came out great though it was moist, light, & had a great crumb. Really liked the ganache although I put a little to much cream by accident so it was a little runnier but it was still good. I ❤strawberries so I also lined the bottom w/strawberries & they're delicious w/that ganache😋Thanks so much for all your recipes👏🏼 It's so small but I used the pic of my cake for my profile pic. Anyway, to answer your question the cake batter looked curdled because of the vinegar/milk mixture. It's completely normal hun, no worries. If you look closely, in my video you can definitely see my batter is like that as well :) Either that OR your butter was at room temperature but your eggs were still cold. Curdling can also happen when these 2 ingredients are not at the room temperature. That being said it's a minor issue because it does not affect the outcome of your cake 😃 Thank you again dear! My son is actually going to culinary school this summer so I'm happy to be able to learn more from him. I made this cake for my son's birthday everybody loved it! But for the icing, it was a little bit runny compare to yours in the video..I don't know what I did wrong..my cream cheese was fresh out of the fridg and my butter really soft..maybe not soft enough? Not enough powedered sugar? Anyways the taste was amazing but a little bit tricky to work with!
