Do not cook your ribs at 687°C that would be impossible. The 7 was sneaky and got it there by mistake. Right temp 68°C! My bad 🤦🏻‍♂️

Yellow mustard is great for both ribs and brisket, though I myself prefer the brown mustard for the binding. I knew as soon as you made the chimichurri sauce, good to go.

I’ve always been a HUGE chimchuri fan and have an awesome recipe that I’ve been using for years - been toying with the idea of adding sun dried tomatoes to my recipe to kick it up to the next level. Thanks for going for it and showing me that it’s a winner (although I was positive that it would be)

"Chimichurri sauce is a good thing or a complete disaster?" I already know that chimichurri is the best friend of every meat. Also, try to brush the chimichurri on the meat while you're cooking it in the grill, the flavour is amazing

An Argentinian friend introduced me to the amazing world of chimichurri. I regularly bbq up a nice big piece of rump, cut it into strips and drizzle a good amount of chimichurri over it. I do find it is better made the night before, to let the flavours infuse. Mmmmm....

Mustard? Man I was using mustard for quite a while till I moved to the Carolinas and found out that honey is better. And oh man was it not only better but provided that very nice sweet honey taste to the flavor, and that is what I've been using from now on.

Have you using a steam oven for sous vide meat. I saw one advertised for bread making and it said it's sous vide too. Steaming a steak would be interesting.

Putting chimichurri in ribs is pretty common here in the north of Spain! But our chimichurri is a bit different from the argentinian original one.

The chimichurri makes sense to me. Honestly, I'd use that instead of the sweet bbq sauce, rather than in addition. It's kind of a similar idea to Carolina bbq sauces which usually have lots of vinegar and so are primarily sour, rather than sweet.
