I found this rusty old Japanese kitchen knife while browsing ebay. What a great find for my restoration projects. It has some rust and the handle needs to be replaced. I was a little surprised how much rust there was on the tang. Luckily it still had quite a bit of steel left so I didn't have to weld a new one on. I used copper and walnut for the handle. All the pitting was sanded from the blade and it was polished to super mirror shine.

I am a Japanese who was moved by your work. Characters that could be identified are (自)"self" or(白) "white" and (合)"combination" Other characters are too corroded. The knives marked with (合)“combination” are steel and iron. Indicates that they have been combined. Or it may be guaranteeing quality as part of the(請合) "contract". And(白) "white" indicates Hitachi Metals' white steel. Or, (自)"self" might be the name of the place, the creator, the knife store, or the owner. I couldn't find what I was looking for. It may be a practical item that was made by a small blacksmith. Sorry for the terrible translation. I will come back to see your great work again. Thanks

Me at start of video: Amazing I have a knife just like this that's rusted. This video can help show me how to restore it. Me 14 minutes later after seeing everything used: Well I guess the knife can stay in the back of the drawer then.

I actually like the copper more than the original brass. I cringed a bit about the bevel being rounded over though... Nice vid man, keep it up.

My biggest issue was the handle it sort of looked like he compensated for making the pocket only on one side but several shots made it look off center to me. 2 he friction fit the blade I would have used some epoxy if only to prevent more rust on tang in future.

yeah the blade geometry and materials on those are very specific, and have to be almost perfect for it to work as intended.

well you called it lazy damascus but it's not damascus at all and i don't think was sold as such anyway. Most traditional japaneses knifes (single beveled) like this Deba will have a steel for the core and a different layer of steel for the cladding. That's just how it is ;)

@Charles-A Rovira Yes. The technique is called "Sanmai" which is three layers, as you've mentioned. A hard one encased in a softer "U" shape which serves as its sides and back to cushion the shock on the hard center section so it doesn't shatter.

Nice work. Thanks for sharing! I do reccomend to use a hard sanding stick when sanding (instead of your fingers) to assure that bevel transition line stays crisp. Also do all sanding strokes in a single direction, and alternate directions when changing grits. By doing so you can quite clearly see if you've removed all previous scratches before going up a grit. It also makes sure that all scratches that are still visible in your mirror polish all run in the same direction, which looks much cleaner.

Mike Nunyabizness he probably picked the knife up at a tag sale or maybe even out of the trash. So no matter how he restored it he probably saved the knife from being thrown away and to never be seen again. I’ve seen other restorations he’s done and they weren’t done correctly but the end result was stunning just like this knife. He restores these items for aesthetics so they either LOOK new or better than new, not necessarily for functionality that would be a different RU-vid channel ie. Gun restoration for dummies or Knife restoration for anal retentive idiots. I am a chef by trade and have knives like Masamoto and Shun so I’m not just talking out of my ass. At the end of the day he does an awesome job restoring things and producing great entertaining videos. Keep up the great work. Great work on the restoration! As a side note please please please at least wear gloves when your doing the sanding work with the heavy grit on the belt sander. It would be a total shame if you irreparably damaged your hands doing restoration work

I should do that more but I also feel that any glove the would protect are just clumsy. Also in case I'm using the best sander for hardened steel such as the blade. I can't wear gloves so I feel when the blade is getting hot and I will not ruin the tempering. I can't do that as well as the master who made the blade.

@@OddTinkering I hate wearing gloves too. You have no feel for your work because they never quite fit correctly either. They're also one more thing to get caught in machinery if the fingers are a bit long too.

just for future refrence use a two part epoxy to bond the knife to the handle and also there is a tecnique where you heat the tang red hot and burn it into the handle

Great restoration. Your videos are very satisfying. Some people will comment on how you're doing things "wrong", but the only thing wrong would have been leaving the item in its state of disrepair.

This is NOT an example of "lazy man's Damascus" (that is rather arrogant!) nor was it ever meant to be "Damascus". This was an every day kitchen knife (possibly a "petty" from its size). It was intended to have the two types of steel. one (harder) to hold the very fine edge and allow excellent resharpening while the other (softer but less brittle and more flexible)) protects that harder but more brittle core. It is a common design of a traditional and affordable Japanese single bevel kitchen knife, not a bloody sword! Are the paring and utility knives in your kitchen "Damascus"?

Hmm. It depends son what sort of bayonett it is but in your case I would actually just do more of a clean up without any heavy sanding because I feel like the scratches and whatever are part of the history and doing similar restoration on that bayonett is going to erase that. Im assuming your grandad was in war. But with this knife for example, I have no relation to the previous owner so I don't feel like I'm erasing part of someone close to me but this is just how I feel. If you want to make it look brand new go ahead and have some fun. Maybe do a shadow box for the finished product?

Not allways 2 steels unless its made with san mai technique ..that is just a hamon line. A traditional way of edge hardening especially if its made from tamahagane. Differential hardening process. It could be san mai though..my spelling of the terms may be wrong..was too lazy to look up the correct spelling..lol

If if I would call, the Japanese laminated steel "lazy man's Damascus)" it actually serves a purpose. Where Damascus mainly just looks good, doesn't do anything more than the regular laminated steel does. If anything I would call Damascus lamination, the narcissists San Mai.

That would be more hon-kasumi. 2 layers of steel like clad. Jigane soft outer to protect the hard Hagane steel. Mokume-gane is more the japanese style of what people call damascus. The characters "white steel" would most likely be Shirogami. That is a quality piece. I personally wouldn't have rounded that bevel. Maybe more of the original finish with a cool handle.

First off the "flat side" actually is sloped. Second, you insulted every japanese blacksmith by calling the two layers of steel "lazy mans damascus". In case you didn't know, Japanese knives since 1400 have been made with a layer of steel on either side protecting the core which is most often shriogami or aogami. You need to do some research about japanese knives because I can tell you know very little. Do your research

Lazy's man's damascus? wtf? soft steel for the spine, hard steel for the edge. Simple engineering. It's how samurai swords have been made for years.

Odd Tinkering guy; This knife is not a "lazy man's Damascus" it is a nimai forged weld. That is one layer is soft steel and one layer of high carbon steel. I am surprised that you are restoring a classical Japanese Deba knife and you did not bother to do any research. Long time ago high carbon steel was difficult to make so to take advantage of the short supply the Japanese developed a two layers knife blade, a nimai blade is two layers as compared to sanmai (aka Warikomi) that is three layers. It has nothing to do with Damascus, and FYI Damascus has nothing to do with pattern-weld blades. Hope you can increase your skills and not get hurt using tools.

How about a $30 belt sander from Harbor freight and a bench grinder with a buffing wheel. Save your hands and many unnecessary steps. The back of the knife is likely slightly concave and not flat.

don't think that's "lazy man's Damascus". look up hamon and Japanese blade smithing techniques. if Japanese people are one thing it's definitely not lazy

I got a deba knife that looked very similar rust and all recently. I just did a very minor blade restoration just by soaking in vinegar and scrubbing. Since I can’t do any woodworking or anything like that I couldn’t remove the handle. But mine is carbon steel and that’s why it rusted. I assume that one probably was carbon steel as well and you just polished it. Also I’m not sure how the sanding would affect it in a kitchen capacity since it has such a particular use. It does look absolutely incredible and seems like a great knife now but I’m very curious if the sanding affected the single bevel having sanded on both sides.

it's incredibly hard to read, and I speak Chinese, not Japanese? but it looks an awful lot like the second set of characters is 米山? That looks like a name to me, but it could be 亦山 too. Hopefully it helps to have the characters to copy paste, but I'm not able to help much further.

Interesting, I’ve been buying San Mai blades from ibukiblade.com, currently putting a handle onto a similar Sashimi blade. Easier as the blades are pristine, rust free.

You must buy EvapoRust industrial heavy duty rust remover. That will help you remove ALL of the rust deeply easier than the you have now! Hand Tool Rescue uses Evapo Rust the best.

the liquid itself is safe to skin, however something like submerging your hands in it can damage them.

it's not lazy man's damascus. Damascus in general does not have a function other than looks. This knife uses two types of steel in different hardness. Blade steel (harder, gets sharp, holds edge) and spine steel (softer, able to absorb shock)

А если попробовать шкурить поверхность дерева и добавлять льняное масло? И если шкурить металл, то дополнительно ещё и смазывать? Ради интереса, это сработает?

That's not lazy damacus,it is Japanese traditional way to make for save good qualities of high carbon steel, but the effect is still good when cooking

I usually use non toxic super glue to cover cuts on my hand to stay mobile. To be clear I am American so this is financial advice, not medical. Edit: pretty sure you're finnish tho

I cringed at 4:50 here's where the knife got changed from a deba to something else. The back of a deba knife is concaved to aide in the slicing of fish. *edit* looks like the bevel was taken out also?

A really cool knife, if this knife initally is only sharpened to one side its used for cutting fish ^-^ its to ensure its a clean a cut as possible. The other type which looks identical to this one and is very simular to a western chef knife and its called a gyuto. It's sharpened on both sides and is used as a multi tool knife more or less like the ones used in the west. The main difference though is japanese blades tend to be thinner but sharper and a insanely good cutter of meat, veg, fruit etc but not quite as good as the western chef knife for tougher things. A Western style can also be very sharp of course but is more heavy duty, it can tackle anything from a tomato to a Pumpkin to even bones if its sharpened properly but downside it tends to be heavier, looses its edge faster and cant cut quite as thin ^-^ (PS im a chef and i've used both styles of knives)

Not actually poor mans damascus, damascus these days functions more as an aesthetic thing than a practical thing. This however is done so that the cutting edge can be made out of a much stronger carbon steel which will hold a great edge and then the rest of the blade can be of a softer more rust resistant material. Even with damascus knives the same thing is done, you will have an outer layer of damascus for a cool look, but then serves no better practical purpose than using a single softer metal and the cutting edge will still be a single high end steel like vg-10 or something

A small cut while sanding... that reminded me of the time I made a small keychain in 3D art class and tried sanding for the first time, only to realize too late that I had been cutting into my thumb with the sandpaper for a while. It wasn’t enough to bleed, but there were so many cuts that the skin on my thumb looked just messed up.

You might have gotten rid of all the rust the first time if you used a wire brush to clean off the worst of it before using the liquid stuff. Also why would you clean the rust off in the liquid if it’s reusable? Clean that stuff off out of that expensive stuff. Use your brain please.
