Reverse Seared Prime Rib Roast for the holidays! Cooking with the Family!

Looking to reverse sear a prime rib roast for the holidays? I have been practicing the reverse sear method now for a few years and it has come out perfect every time. It was a tough concept for me to grasp at first as I have always been taught the high heat to start, and then low heat to finish. While I will say this is not a terrible way to cook meat, the reverse sear is way better in my opinion, and hopefully this video will show you why. Just remember to trust your meat probes/thermometers and they will never fail you!
This was a 12lb Prime Rib Roast that was cooked at an oven temp of 220 for about 4 hours. I pulled the roast when the internal temp hit 122. You can adjust this based on how rare you like your beef. Once the meat is pulled out, rest it for about 30 mins, get your oven on a high broil in the meantime. Once you have rested for 30 mins put the meat back into the high broil. Remember the meat is already cooked and rested at this point so you are just looking to get the outer fat bubbling and crusty, so don't leave it in there too long. The bonus to this technique is that once you get the fat bubbling and crusty you can pull the meat, go right to your cutting board and start cutting slices, remember the meat is already rested.
A quick tip that I have learned after doing this many times, is that when you cut your slices, put them right on individual plates to serve. Although it is nice to put the slices together on a plate to serve, they will continue to cook, and you will loose that beautiful pink rareness that you spent hours perfecting. I may or may not have made this mistake before so trust me.

Great video- very well explained and well done. I am a 70 year old man - retired chef from a Michelin rated restaurant. ( CIA -culinary institute of America trained). The only difference I do to my prime rib or Bone in standing rib roast is to take a sharp tipped thin bladed fillet knife- poke slips a couple inches apart and about an inch to inch and a half deep twisting the blade about 90 degrees while the blade is inserted and slip sliced fresh garlic into the holes just deep enough as your little finger will allow -then I put small sprigs of fresh rosemary into every other hole- and do the exact rub as yours. I think you may be pleasantly surprised of the flavor from the inserted fresh garlic and rosemary which permeates through the entire roast. Also, I normally open air refrigerate 48 hours rather than 24 with USDA choice but 24 hours with USDA prime. Please don't take offence- just trying to offer 40 plus years of cooking maybe thousands of these over the years. @@whatchacookin2793 i always use garlic and rosemary in my lamb roasts and make a gravy out of the juices after adding more of a full halve bulb of garlic to.roast in unpeeled as iake the gravy. Roast garlic come put so.sweet

I always use this method with rib roast and love the results. Haven’t read all the comments but someone probably said you have to cook a rib roast with the bones because it adds flavor. They don’t. They only serve as a heat shield so the roast doesn’t cook uniformly. I cut the ribs off and cook them separately and everyone fights over them. Also if you’re pinched for time you don’t have to sear the roast, it’s great as is with the low and slow method. Nicely done. Oh and you’re little girl needs her own channel😉.

Very nice! Just one minor suggestion, about the marvelous pan drippings. When you take the meat out to rest, you can pour off the pan drippings into a saucepan and deglaze the roasting pan (if needed) with a splash more wine. Clean the roasting pan and rack for less smoke while finishing. Strain out the veggies, and then -- while the meat is resting -- reduce the liquid in a saucepan. While the meat is finishing in the very hot oven, finish reducing the pan juices and then add about 2-3 tbsp of unsalted butter. The butter will melt into the sauce. Taste it for seasoning (sometimes it needs just a bit more salt), then squeeze a little lemon juice into the sauce to make the flavors pop -- I use a quarter of a lemon, maybe a half. Now you have a lovely and delicious jus to ladle over the meat and perhaps the potatoes that are no doubt on the side. Nice video, love the family, pay not attention to the critics and nay-sayers. I've been doing this method for rib roasts for a while. I do like doing it in my smoker - but not necessarily for the smoke, but just because it has a probe and is a very good low-temp controlled oven and frees up using our main oven for other things. Sometimes I put wood chips in for smoke but never a lot with rib roast. Just set it for 225, pop the roast in and shove the probe in and leave it for a few hours (depending on size) until the temp is ~125 F. I don't finish it in the oven, though. I fire up our grill to high as it goes and finish the roast by rolling it around on the grill until it is seared all around. I've also finished it over a live wood fire in the fire pit. Oh my god that one was the best. With the reverse sear method you could also use a torch to finish it. Whatever works.

That's pretty much how I do mine, except I wrap it in cheese cloth for a week to ten days in the fridge. THEN the night before I rub it down. That extra drying time (tempered by the cheese cloth) makes a noticeable difference in the bark.

nice video ribeye cap came out very nice. but if you wanted to dry it out dry brine with salt for 24-48hrs first once you added oil to it nothing dried out.. over night with salt then put your oil rub on it

Beautiful family!! And my dog can be in my kitchen anytime..they are family!! I consider myself a fairly seasoned cook..have never been afraid to take on anything except a prime rib roast!! I’m alone now and don’t have much family anymore but I want holiday food.. I purchased a small roast (7.25lb) and I’m gonna give it a whirl!! I’ve been watching videos all day so I don’t screw it up and I think your reverse sear gives me the end result I’m looking for!! The other method does not give you the pink throughout the roast like this does..most are more done around the edges.. wish me luck and maybe Santa will send me someone to share it with!! Haha I’m with you on that, Our dog is part of the family for sure, there’s no off limits for him. I was fearful of these too especially when hosting. We always have a seat open at our table! Give it a try, and just trust your meat thermometers! Pulled at 122, tested uncovered for 30 mins, then blast on broil, (or if it’s a small one hit it on the grill for a second) and pull it! Man that looks juicy! I did something similar with mine yesterday but did it in reverse, I’ll explain So I had a 8.5 lb rib roast and after I seasoned it and coated it with a garlic herb butter I blasted it at 500 degrees 5 mins/lb so about 50 mins give or take then after that I turn off the oven for about 2 hours WITHOUT opening it to let it finish cooking, and it came out the same way as yours did…perfect medium rare and nice crust

After I quarter out a deer I dry it out on tables in my garage. At 24 hrs your start to get a nice rind at the 36 to 48 hr mark is when I butcher it all into useable cuts. I would think that using the oil the night before is hindering that process a bit.

Actually the oil with the water from the garlic blended together qualify it as an emulsion. That's why it looks pale yellow and creamy like margarine.

Nicely done! I trim all the exterior fat before cooking or smoking to get an edible crust. There’s plenty of internal fat for flavor. The reverse sear method allows for cooking ahead of time, but still getting a solid crust before serving.

It can be stressful for sure! This is the best way in my opinion, just follow the temps and it won’t fail you, I think I may have said pull the meat at 224, of course I meant 124!

Was this a boneless or bone-in? I didn’t see any bones but may have missed it. I ordered a 7 bone from my butcher, he is going to bone and tie them back on for me, but I wonder how the bones will affect the cooking time? And I have no idea how much a 7 bone is going the weigh. Just trying to find out if I gotta get up at 3:00 am to have this baby ready by 1:00 pm 😂

I missed the time calculation. My roast is a lot smaller then this, only two ribs, but I’m not sure how long to cook it for. Can you sub out the wine for beef broth for Au jus?

It’s just a dahlstrong, they are fairly inexpensive (for knives) and it works well for big cuts like this. 👍🏼

You will be around 4 hour cook time for that size at that temp. Plan for a rest and then a blaze at broil just to crisp. Good luck and enjoy!!

What temp should the prime rib be for medium rare? I don’t want to pull it out of the oven too late and then have it rest and it be too cooked and then put it under the broiler. Tips please!

Just do hi broil after the rest, only long enough to get the outside bubbling and a little crusty, not long! Enjoy let me know how it comes out!

Maybe 10 mins? You are really looking to get the outside nice and crispy (if you want it that way) so just watch it, not 550 just straight broil

How long to Cooke for 4pounds prime rib?

I haven’t done a 4 pound one, but even the smaller ones can take a little time. I would say a couple hours at least to get to 124 internal temp. Let me know how long it actually takes for a 4 lb. Give your guests a round about time for dinner time 🤣.
