Man, that wire rack has seen a number of cooks on it or cooking frustrations taken out on it. 🤕 Looks like a 3D topo map of Great Smoky Mountains. 😆 But I guess it is still alive and keeps on keeping on.

Which steak cut is most popular, prime rib or filet mignon? I don't very often have ribeye. I tend to eat the filet but this meat he has cooked up looks great too so maybe I should try it again.

So, could you buy the whole individual, uncut steak at the truck? If so, at $45/lb, how much would that be...approx $90/steak?

might be an unpopular opinion but I believe that smoking a ribeye is an absolute waste because you are masking (tainting) the glorious essence of the beef and beef flavor with smoke. I love smoked meats, just not smoked ribeye.

Post oak is mild and compliments beef. I've never felt that a brisket flavor was masked, and these were smoked less.
