Chawal ki kheer or rice kheer is one of the most loved and made sweet dishes in many Indian homes. Kheer and payasam are the terms used interchangeably and both are derived from the sanskrit terms “ksheer” & “payasa” both meaning milk. Rice kheer is made with full fat milk, rice, sugar, and cardamom powder.

If you give sugar just after putting the rice, rice will take long time to boil and sometimes might not even boil properly by that time the milk will completely dried off. Once the rice is almost cook them adding sugar might be a good idea

My mum taught me that you should mash the uncooked rice a little after it has soaked in the water. This stops the rice from soaking up all the liquid and overwhelming the dish

You should crush the rice before adding and also you should roast the dry fruits in ghee. Trust me it tastes like heaven 😊

I added vanila essence. I used basmati rice I boiled my rice a lot in milk till it becomes thick. I will put in fridge and enjoyed cold. My mum makes the best. But she us in different country so I have to make to enjoy
