Ingredients] (1 to 2 servings)
200 g pork block (shoulder loin or filet is recommended)
1 leek (green onion)
1 piece of ginger
1 egg
Potato starch
Actually, ginger is the key ingredient.
Black Vinegar Sauce
3 tablespoons black vinegar
2 tablespoons sugar
1 tablespoon soy sauce
1 tablespoon sake
2 tablespoons water
Recipe
1) Cut meat into bite-sized pieces, sprinkle with salt and pepper and sake, and soak in 1/3 egg for 15 minutes.
2) Shred the green onion and ginger. Soak the white onion in water for 5 minutes to remove the pungent taste.
Make the black vinegar sauce.
(4) Coat the meat with potato starch and deep-fry at low temperature (about 160℃) for 4~5 minutes. Finish by frying at a high temperature until the meat is colored.
