The most important thing for risotto is to prepare a good and tasty broth. I always review the vegetables before adding water. And then I put a piece of Grana Padano or Parmesan cheese, it will be our nut! Then cut the onions thinly and simmer them over low heat in a non-stick saucepan with the lid on.
06:10 I shred the rice with a knob of butter and a drizzle of extra virgin olive oil, to raise the smoke point of the butter.

Cannara Red Onions - 6-8 pcs
Balsamic vinegar of Modena
Caster sugar
Butter
For the broth: celery, carrot, GranaPadano or Parmesan peel
