This risotto of mushrooms recipe was told to me some years ago by an italian flatmate who was an authentic gourmet of the italian food. From that moment this recipe of rice and mushrooms has become one of my favourite dishes and I cook this almost every two weeks.
In this case I have used mushrooms as the main ingredient, but this recipe can also be used to make other varieties of risotto. For example, instead mushrooms, you can use green sparagus and ham, different types of cheese, and many other combinations.
