Looks nice enough to me. Lovely. A few other tips. Brine your chicken in plenty of salted water beforehand, overnight best. Pat dry and bring up to room temp before roasting. This bit is pretty important! Foil for the 1st hour or so at 160c then remove foil at 180c til done. Roast breast side down? Let meat rest for 10mins afterwards. Lemon/garlic in cavity optional but ok. Veg which are grown beneath ground best to place into cold water then bring to a simmer. Above ground, plunge into boiling water. Dash of vinegar? Add to water when doing greens. Do not overcook! Get them to al dente, drain and cover in pan they'll still gently cook... Add warm milk, butter and if you're feeling decadent dollop of double cream to mash. Boil spuds til extra extra, soft. If doing carrots on the stove, leave them in water with added sugar for an hour before and continue during cooking. A good few spoonfuls. Slow and low simmer...knob of butter when done optional. Feed the dog, cat, fish, hamster, quail, python if applicable. Tuck in.
I do the same trick you do with the carrots for my Xmas sprouts! I add bacon and a pinch of caraway seed to it aswell, it's absolutely fantastic, much love meej.
If you can taste the mash through the outer of the Roast Potatoes they are literally inedible. Never have things like this often at all so I suppose makes Roast Dinners nicer when I do.Is there a Christmas edition in ten weeks?
