One of my favourite things about watching British meals as a Dane, is that everything feels so familiar, and still so very foreign at the same time. Never had bread sauce (only heard about it even existing maybe a month ago) never had cheese with cauliflower, never had yorkshire pudding (which I must admit are the ones I wanna try the most) but at the same time, it all feels like it would fit perfectly into Danish cuisine? If someone made me this meal, I wouldn't question it one bit

That would be a really interesting challenge to see because I wonder what dishes they believe are achievable without an oven and how they can still produce different components using things like hobs, microwaves and kettles! A joint of meat like chicken probably isn’t achievable without an oven so how would they present a protein option safe to eat without being able to cook it through? Would they sear their meat then poach it in a bowl of boiling water? Would they trust the microwave to cook the meat through without overcooking the exterior so it becomes tacky and sticky?

A roast chicken dinner is just perfect for this format. Theres so much technique that can be honed and perfected resulting in an overall better dish... but you also can drastically improve the meal by, as they say in the video, getting a nicer quality chicken, or splurging for a few extras here and there. Well done by both Mike and James on this one!
@arklytte
@arklytte 3 года назад
Even just something as simple as getting fresh herbs instead of dried, or spending a few extra dollars on a better bottle of wine (since you can both cook w/it and drink it w/dinner). Or, since the chicken is the star (and veggies are cheap...plus if you can find a local farmer's market, you can get *GREAT* veggies for less than the cost of average ones in the supermarket), splurge on a better chicken. Pretty much all the rest of it was technique. James used every trick out there to add flavor to his gravy (though mike's idea of smashing his veg to get it to release more flavor was a great one as well...combine the two! :) )...I was literally drooling because I just knew it was going to rock.

Have actually got some tips out of this battle which I'm definitely going to use - particularly with parsnips. Also never thought of resting batter as a chef-y thing as it's always something we've done. Whether we're cooking yorkshire puddings or pancakes. Just gives better results.
@chrisbaker91
@chrisbaker91 3 года назад
With Yorkshire pudding resting it comes down to temperature of the batter when you put it in the oven. To get a decent rise you need it to come up to temperature quickly when put in the hot oil. A freshly made batter will often be using fridge cold milk so will take longer to come up to temperature.
@AlanHope2013
@AlanHope2013 3 года назад
@@chrisbaker91 I've always assumed the resting -- for example with pancake batter -- was to allow the flour to absorb the liquid, and give less of a floury taste when the pancakes are cooked, which happen pretty quickly. I also add just some of the milk to the batter, and then adjust after resting once the flour has taken up some liquid . If you were to add the milk too early, you'd have very thin pancakes. If you let the mixture rest, you can decide for yourself whether you want crepes or Canadian-style.

Two hours for a whole roast dinner? Easy. We do that as a midweek meal. The trick is to put some chicken stock in the bottom of the roasting tray and then seal the whole thing with tinfoil. It basically steams the chicken, self-bastes, and it can do that for an hour. Then you drain off all the juices, leave the veg and chicken in the tray, spoon the fat from the juices over the chicken and put it back in for half an hour to get the outside nicely golden and crispy. That last hour you can spend on veg (parboiling is your best friend), gravy, yorkshire pudding etc

Michael did very well. His dinner, even though on an unlimited budget, looked like an excellent family dinner that would be served on a weekend, especially a Sunday. I intend to serve this to three guests & myself of course, that I will invite over this weekend. During these rather stressful times in America, sharing food with friends is very important!😸

I really love your formats and your friendships. A battle like this doesn't in theory *require* the two hosts commenting/supporting on the side throughout the cooking, but it would be SO not the same and much less fun if they weren't there. Y'all are essential and fun and have differently charismatic personalities and are just all-round 👌 🥚🥚 and I love you guys and now I'm gonna shut up.

Those were two fine looking plates of food and I think it's about picking those quality ingredients that don't break the bank (I mean those carrots, come onnn haha) but go for a chicken that you know had a good life, even if that means to spend a little more.
