Thanks. I changed the recipe slightly. Also cook fresh chopped rosemary on it and eat with the skin on. Good stuff!

You don't eat the salt. You can brush it off, or peel it off after roasting. It brings out the natural sweetness and flavor in the beets. It's a popular method for roasting root vegetables.

That sounds delicious! Do you have any good recipes for beet greens? I posted my dad's recipe "Harold's nutty beet greens" on my blog... Beet stems, roots, and leaves, butter, lemon, olive oil, garlic, a little dill, and salted pistachios. It's sooo good!

I have been oven roasting my beets for years and years with just a light dusting of salt. I tried this approach and I was really surprised how much more tender they came out without being dry. I wonder why that is. Anyway, great technique, thanks!

No really though cause he cut off all the skin sadly. So he just got some salt flavor that made its way through to the meat. That’s why he added so much I guess

It's a pretty good amount of Kosher Salt. The beats per this method were perfectly seasoned when I tried it. Now I do it this way all the time. I do put the beets in a kind of sealed parchment paper to keep the roasting plan mostly clean. And just take the peeling off with a paper towel! I cut them all up into nice beet salad size pieces, pour over them a bit of Basalmic Viniger, stir it all up, store them in a covered bowl in the fridge. They mostly get used up in Beet, Baby Arugala, Goat Cheese, Roasted Walnut salads.

Just tried this. It's a super tasty way to cook them. The salt got soaked up or absorbed and brought out that nice quality in the beet in addition to the sweet. Thanks

So I absolutely love roasted beets but I do mine a little differently than you. I actually cut and skin mine before cooking. I cut into same cubes and I use no salt and I place in oven 400 degrees for about 45 minutes to an hour and they are so tasty and sweet. I also pair them with roasted sweet potatoes as well they really compliment each other well. Your method looks good except i don’t use the salt or oil but thanks for sharing.

Grow red cylinderbeets instead, boil them with skin and root for 5 minutes, drain the water, add cold water, wring the cooked cooked beets in you hands under cold water. That way the skin slip off in seconds.

If you look in to food science it’s almost impossible to taste food to it’s best quality if there is no salt. Because we actually produce salt so if something is under that amount of salt that we produce then it’s pretty much tasteless it might smell great but without salt it’s point less.

I wonder why you left the skin on the corners. If you peeled the beets, there would have been less thrown away with the skin. Maybe too many stains on your fingers, huh?

Why?, because beets are grown in cow shit and dirt and the skin tastes like dirt. I don't mind skin on other veggies but not beets. They are easy to make roasted or boiled and my favorite part is the greens on top, they taste much better than spinach or chard, they are sweeter.

ever tried growing your own beet? i always have, if you trust shop bought beet not to have systemic fertilizer and no insecticide on the leaves, i grow mine with companion planting, keeps the nasties away,,

just rub the skin with a clean hand towel. the skin will peal off with no effort. but it will stain the cloth for good, i remember putting the in a bed of salt. ... love roasted beets. never had them until working salad, charcutateri station at my last job.

you don't have to season it before roasting, simply bc nothing will get under that skin (just like with potatoes). normally you just roast (or boil on low for 2 hrs adding water), peel, slice (chop) and add salt. even a better recipe is to grate it, add table salt, if you want - squeeze garlic to it (one clove for one medium beet), and add either sour cream or mayo or 50/50. you can eat that as a side dish or as a sandwich topping

Must admit I am curious as to why so much salt is needed, especially when later the skin is cut off. Does it help in the cooking process to bring out juice or something?

I'm cooking them right now. When I put them in the oven my smoke alarm kept going off. I took them out and put them on another pan without salt all over the pan. The alarm hasn't gone off for five minutes, so I hope I am okay. I opened the windows.

Wrap them in foil, roast in a pan with an inch of water, they will peel easy without all the waste shown here.

To all these old people complaining about the salt- my dad got out of the hospital a while back for pneumonia- while he was there his doctor told him he should start watching sodium intake for blood pressure. So I've heard all this before lol.

Lots of waste here. Scrub beets well, season, roast & enjoy. While roasting beets, saute tops with olive oil & garlic. Less waste in my kitchen.

Hello. You're not consuming all that salt. The salt infuses into the beat to give it a little seasoning. The beets do not taste "salty" at all. Cheers!

Salt adds flavor. When you cut it off, the center is perfectly seasoned.
