My new fave cooking channel! My best friend in primary school was Greek, and I loved spending time at her house, in her mother's kitchen. Greek food is so delicious!
This salad is one of my favourites, I adore beets. Another riff is using pears and candied pecans, the same ingredients for the rest of the salad. So delicious!!!
This was so so good. Served with pork ribs and baked beans, and everyone said the salad was the star! Better than pork ribs, no kidding. The nuts really make it. No walnuts here, so made some maple glazed pecans with chipotle powder. Do not leave out the nuts, whichever kind you use. Only had baby spinach, which worked fine. I dressed the salad very lightly, since my SO is not so fond of vinegar. Also added a bit of butter to the beets while still warm. Thank you so much! I served extra dressing on the side.

We just discovered we like beets. I had only tried pickled as a kis and didnt like them. Here I am 50 and just finding out how great they are. I will be making this in a day or so. Looks AMAZING!!
I drizzle quite a bit of olive oil and salt with the garlic and beets...after roasting, use the garlic infused oil in the salad...makes a big difference!
Looks delicious. Well done, I'm definitely gonna try this,.I have loads of beetroots growing in pollytunnel and I'm the only one that eats them. I figure if I cook em up and present them like you just did they might just sample them. Thanks for the demo.
This does look delish. I am cooking new Years dinner for our Bubble. I can't believe I hadn't discovered beets and feta before this. Makes perfect sense. I don't like my greens so heavily dressed...but I am also going to add some dijon mustard because it works as an emulsifier for the dressing and goes perfect with honey.
This was SO good. Wow. Substituted pistachios for the walnuts, also a very yummy crunch. This was a terrific way to roast beets too. Thank you Dimitra. :)

Killer recipe. Walnuts and Feta? C'mon, that's heaven. Although from a technique perspective, I prefer to peel beets like potatoes with a peeler before roasting them. That said, right on Dimitra!
