very odd combination but I do love the unique flavor of celeriac. Gotta afford the smoking gun which isn't likely to happen 🤪 But I LOVE Your creativity!! 😍

This looks delicious! Would pretreating the celeriac with pectinex and clarifyjng help the overall texture of the ice cream?

You can certainly try that! We didn't think to do it but it may very well produce a totally different ice cream.
